Cooking Light Gluten Free Cookbook Review and Giveaway

I was recently sent a copy of the Cooking Light The Gluten-Free Cookbook to review.

I was excited about receiving a copy of this cookbook because I am very familiar with Cooking Light. I have owned several Cooking Light Cookbooks for years and I also subscribed to their magazine several years ago. However, I did not know that they had a Gluten Free Cookbook.

As I started looking through this cookbook, I was immediately impressed with the pictures and the layout of the cookbook. I love cookbooks with lots of pictures and the pictures are gorgeous in this book.

This cookbook is filled with gluten free baked goods and tips, but it also includes a lot of regular food that just happens to be gluten free.

A few weeks ago, I made the Pasta with Roasted Red Pepper and Cream Sauce. I added sausage to the recipe to make it a main dish and my whole family loved it. It was a pasta dish I could have served anyone.

I have several other recipes marked to try, including egg crepes with sausage and Cinnamon Raisin Muffins with Streusel Topping.

I have now been gluten free almost two years, and I have been amazed at the number of gluten free cookbooks that have been publishes since I went gluten free. Having cookbooks like this Cooking Light Gluten Free would have been so helpful when I first went gluten free. Yes, many of the recipes are normal food, that just happen to be gluten free, but having them in one place and knowing that they are safe to eat is so helpful during those months where you are trying to figure out what gluten free eating is all about.

Now, there are a few things that were a bit disappointing about this book. Overall, I really enjoyed the cookbook, but it was not your typical Cooking Light cookbook. Many of the recipes use mixes and prepackaged food and that is not something you usually see with Cooking Light. And many of the recipes are not really what I would consider light and healthy.

For example the pasta dish I mentioned above was very good, but it contained 1 cup of half and half and 1 cup of cheese. Now, you could easily use a low fat half and half and use less cheese, but if you follow the recipe as written it is not really what I would consider light.

And for those of you with nut allergies, I will mention that many of the recipes contained ingredients or mixes that you can not have. The book does not claim to be nut free, and many of them can be adapted, so this really is not an issue, I just wanted to mention it since I know many of you deal with nut allergies.

If you are new to gluten free though, or do like recipes that are quick and easy this book is something that I think you will enjoy.

My family is not gluten free, but we have several close friends that are. I would love to have this cookbook on hand to help me think of recipes when they are coming over for dinner or when we take something over to their homes.

Having just recently (one week ago) gone gluten free and being really into cooking, I have been on hot pursuit of recipes like these (either adapted to gf or already naturally gf in and of themselves). It would be wonderful to have them in one place and to stop dragging the laptop into the kitchen! I LOVE having REAL cookbooks!

I just recently learned of your website as a place to find inexpensive meal ideas. I was so excited to learn that you also post gluten free recipes! I have been GF for almost 3 years and love finding new recipes. Thank you for posting the cookbook review.

I’m sure we would have to make other subs because of our other food allergy issues, but a cookbook that already has the gluten free aspect taken care of would be awesome!

We just switched to a Gluten-Free diet in February. Originally, it was just a change I was making, but as I did more research it seemed like something that would help 3 out of my 4 children as well. That decided, it was simply easier to go completely Gluten-Free than to try to keep cross-contamination or my 3, 5, and 6 year old from eating Gluten. So far, my hubby and my 2 year old do not seem to have any negative effects from Gluten, but Gluten-Free certainly isn’t hurting them! :) In fact, we have all enjoyed the benefits of our new Gluten-Free diet, such as fresh baked yeast bread! I was NEVER brave enough to try baking yeast bread before. But, paying $6 a loaf for GF bread or going without drove me to desperate measures, although it took 7 months to get to that point of desperation. ;) The results of tweaking 2 recipes were GREAT!! In fact I can’t wait to make more bread tomorrow! I am ALWAYS on the lookout for new GF recipes to try and Cooking Light Gluten Free Cookbook would be a welcome addition to my collection.

Lynn, I have been following your page for awhile. I am in the process of going gluten free. I have eczema on my hands and feet real bad and I have noticed if I eat gluten free that they are much better so I am working very hard on finding foods that I can eat.

I have been considering going gluten free for some time now, hoping it would help my health in several areas. I would love to have this cookbook to try. I am not concerned about the “Light” part, because losing weight is not a high priority for me, and I am not allergic to nuts so it sounds like it is perfect for me!! I have been following you for years in various forms, email, RSS, etc. I finally tried your Crockpot Salsa Chicken recipe (had to tweak it a little, no cumin in the house and had to 1/2 it) and it has been a HUGE hit with everyone who tries it!!! Thank you so much for all you do!!!

There is nothing easy about GFree cooking. It takes time, patience and practice. I do miss lots of foods but I don’t like being sick so it’s a no brainer really. I take any help I can get.
