I recently bought sweet potatoes for 25 cents a pound. That was a really good deal so I bought quite a few. Now, I need to find creative ways use them. One of the ways that I have been using them is by making Sweet Potato Oven Fries.
We have really enjoy these. First I peel the sweet potatoes. Then I cut them into strips. I cut them smaller then I would my regular potato oven fries. I then toss them in melted butter and seasoning. I have used Paula Deen’s House seasoning and also Emeril’s Bam seasoning. Both ways were good. I like to cook these at a high heat giving them more of a roasted flavor. I cook them at about 400-425 degrees. I stir around every 10 minutes or so. They take about 30 minutes but cook until tender. These do not crisp up quite like a potato but they are still very good.
These are a great healthy side dish.

Oh the predicament of buying a deal in bulk and finding ways to use it. It’s like when I buy 10 lbs of butter from Costco thinking I need it. At least you bought something that is good for you! This recipe sounds delish!

I adore these! If you toss em in the fryer they crisp up just as nice as regular spuds, but in the oven they never do.

@Eamon Lynch, Thanks for letting me know. I am so glad you liked them. I have not made them in a while and need to make them again. It is one of the few ways my kids will eat sweet potatoes.
