These cupcakes are also easy to make gluten-free.
Last year I challenged myself to cook more from my Martha Stewart cookbook challenge. I loved that challenge and I am enjoying occasionally sharing more of the recipes from my collection, but the reality is that I have been making Martha Stewart recipes for years.
This Banana Cupcake with Honey frosting is a Martha Stewart that I originally shared back in March of 2008. That was the year I started blogging. In fact, it was only the second month of my site.
I don’t remember which Martha Stewart cookbook this recipe came from. It might have been from a copy of her Everyday Food magazine, no matter where it came from it is a delicious recipe.
I recently made these gluten free, using Bob’s Red Mill 1 to 1 Gluten Free Flour Blend and I knew that it was time to update this recipe and post. I still make the cupcakes the same, the only difference is that now I use the 1 to 1 gluten free blend.
If you are gluten free it works great, but if you are not gluten free this is also a delicious recipe that I have been making for years. Not matter how you make these that are a great way to use up any extra ripe bananas that you might have on your counter.
These are really good with frosting as a cupcake, but if you skip the frosting they are a more like a muffin. We like them both ways.
The honey frosting is a delicious and unique honey frosting that works on many other cupcakes and cakes. It is good on applesauce cake, gluten free carrot cake, and more.
Ingredients
- all purpose flour or Bob’s Red Mill 1 to 1 Gluten Free Flour Blend
- sugar
- baking powder
- baking soda
- salt
- butter
- bananas
- eggs
- vanilla
- powdered sugar
- cream cheese
- butter
- honey
Banana Cupcakes with Honey Frosting
A delicious banana cupcake with honey frosting.
Ingredients
- 1 1/2 cups all purpose flour or Bob's Red Mill 1 to 1 gluten free flour blend
- 3/4 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup butter, melted
- 1 1/2 cups mashed bananas
- 2 eggs
- 3/4 teaspoon vanilla
Honey Frosting
- 1 3/4 cups powdered sugar
- 1/4 cup cream cheese softened
- 1/2 cup butter, softened
- 1 1/2 tablespoons honey
Instructions
- Preheat oven to 350 degrees. Line muffin pan with liners.
- In a bowl mix flour, sugar, baking powder, baking soda, and salt.
- Mix in butter, mashed bananas, eggs, and vanilla.
- Stir just until incorporated.
- Spoon better into muffin pan lined with paper liners.
- Bake 25-28 minutes or until done.
- Cool completely.
Honey Frosting
- Mix all together, beating for about 5 minutes.
- You want it light and fluffy.
- Frost cupcakes.
Notes
I tested this recipe with Bob's Red Mill 1 to 1 gluten free flour blend in place of the regular flour and it worked great. Other blends may work as well, but I have not tested them.
