My husband has been telling me for a while that I should post this recipe. I kept telling him that it is not really a recipe.
I told him that this was so quick and easy that no one would care about how I do this. But every time we ate this he would ask, “Have you posted this?” I finally realized that he thought I should post it because he liked it so much that he thought others would like it too.
So, I finally decided to post my easy guacamole recipe. I will admit that this is not very authentic. I am not sure I should even call it guacamole. So, let’s just call this guacamole like.
And those of you that cook really authentic Mexican food you may want to skip over this recipe.
The main reason this is not authentic is I that I use a bottle of store bought or home canned salsa to make it.
The problem is I refuse to buy tomatoes in the middle of winter. We have a garden full of tomatoes during the summer months. We love having those tomatoes. In fact I make fresh salsa often during the summer, but during the winter I only by canned tomatoes or salsa.
I don’t see the point of buying tomatoes that have very little taste or flavor. Yes, I know you can buy the vine ripened tomatoes, but I still don’t think they are very good.
So, easy guacamole is what we make when tomatoes are not in season.
Easy Guacamole
Guacamole that is easy to make and full of flavor.
Ingredients
- 2 avocados peeled and diced
- 1/3 cup salsa, I use home canned, Pace, or whatever jar of salsa that I have in the fridge
- lemon juice and salt to taste
Instructions
- Mash the avocado and add salsa, lemon juice, and salt.
- Serve with tortilla chips.

I make it the same although will add plain yogurt or sour cream if I have. It’s something I put together but don’t measure. Yum!

This is similar to mine—from the frugal gourmet. I add a pinch of cumin. green onion/regular onion and salt and pepper. We love guac here and it is so easy to make.

I am the only one in my house that will eat avocados, so I have been known to do the same thing. It’s quick and it works.

Don’t forget to keep the seeds of the avocados to keep the guc from turning brown. That’s if your family can’t eat all of it in one sitting. 🙂

I love guacamole–especially with this pregnancy! This is similar to how I throw mine together, too. I also add a pinch of salt and some cumin, like another commenter mentioned. Yum! Wish I had some avocados….. 🙂

I love a good quacamole that isn’t diluted by mayo, sour cream or other ‘fillers’! This sounds very similar to mine but I also use lime juice – delish!

Hey, “authentic” is great and everything, but what’s more important is that a recipe work for the cook and the folks eating it. Just my two cents!

I’ve done the same thing. If I have them on hand, I’ll add cilantro and lime juice, too. No one would ever guess you didn’t slave for hours over your hot stove making guac!
