We love homemade granola and I make it often. One of the things I love about homemade granola is that I can control the ingredients that go into it.
It is also easy to change it up and make all kinds of different flavors. The coconut granola I am sharing today is one of the newest ways that I have changed it up a little.
This coconut granola is my new favorite granola. I love eating a bowl of it with yogurt or milk for lunch. Yes, I eat granola for lunch often because it is a healthy and quick lunch, but this is also perfect for a healthy breakfast.
If you have not tried homemade granola I encourage you to give it a try.
Homemade Coconut Granola
Make your granola at home so you can control the ingredients.
Ingredients
- 1/3 cup brown sugar
- 1/3 cup coconut oil
- 1/2 cup honey
- 2 teaspoons vanilla
- 3 cups old fashioned oats ( I used gluten free)
- 4 cups quick oats ( I use gluten free)
- 1 1/2 cups coconut
- 1/2 teaspoon coconut extract (This is optional, but really gives it a nice extra boost of coconut flavor.)
Instructions
- In a small saucepan mix together brown sugar, coconut oil, and honey. Bring to a boil. Remove from heat and add vanilla and coconut extract.
- In a large bowl combine oats, coconut, and sugar/oil mixture.
- Stir until oats are well coated and everything is combined.
- Spread into 2 9x13 pans.
- Bake at 350 degrees for 10 minutes.
- Stir, turn off your oven, and put the granola back into the oven for 3-4 hrs. The heat left in the oven will finish cooking this. I love this because I can make this and walk away for a few hours without having to continually stir the granola.
- Remove from oven after 3-4 hours. Let cool and store in an air tight container.
Notes
If you are gluten-free be sure to use gluten-free oats and read labels to make sure that your ingredients are gluten-free.

My husband would love this recipe! Where did you find coconut extract? I am assuming you do not use imitation. Also, is the coconut you use unsweetened? Thanks for your help!

I usually find the coconut extract in the baking aisle with the other extracts like vanilla etc. On the coconut I usually use whatever I have, both unsweetened or sweetened will work. I hope you enjoy it.

That is why we love homemade granola too. My daughter is allergic to all tree nuts and peanuts and it is almost impossible to find one that she can have. Homemade works great because we know what goes into it. I hope you enjoy it!

I have a (maybe) dumb question…..why would you use regular and quick oats? I don’t usually have the quick and was wondering if I could just use all regular? Sounds awesome though! LOVE coconut 🙂

No that is not a dumb question at all. It is a texture thing. You can use all regular oars or all quick oats, using a combo of both gives a little different texture and we like it that way. But you can easily use all regular oats if that is all you have.

Does it matter if you use refined or extra-virgin coconut oil? Will there be a flavour difference?

I use the refined. The coconut flavor seems more mild with it and so that is what I keep on hand. I think the other would work fine, it would just have a stronger coconut taste, which is this would be fine. In baking and other things though we find the unrefined coconut too strong, but that is probably a personal preference. I hope that helps.

I have a small convection oven that I can only put one 9×13 pan in at a time. Would the whole batch fit in a pan? If I stirred it occasionally, do you think it would work?

I don’t think it will crisp up as well in just one pan. You would probably be better off just cutting the recipe in half and doing it in one pan. I hope you enjoy it!

What brand of gluten free oats do you buy? I bought a big bag of gluten free oats and my kids used it up. The brand name escapes me.

I usually buy Bob’s Red Mill, but I have bought a few other brands when my the food co-op I order through has them.
