I posted on Facebook last week that I was cooking meatloaf in the crock pot for the first time and many of you mentioned that you cook it in the crock pot all the time.
So, I guess I am behind the times, because I really do not remember trying this before. And now I am wondering what took me so long to try meatloaf in the crock pot. It turned out great. We loved it and I loved how easy it was.
Some of you mentioned on Facebook that the only problem you had with cooking a meatloaf in the crock pot was that it tended to be greasy and I can see why this could be an issue.
I think this could easily be solved by placing some chunks of onions under the meatloaf or even rolling up some foil and setting the meatloaf on it like some of you mentioned on Facebook. You basically would want to lift the meatloaf up so that it is not sitting in its own grease while it cooks.
I will say though that I did not have this problem. I used really lean ground beef and some ground deer meat. I had no grease in the bottom of my crock pot, in fact mine got a little crispy on the outside. So, I really think it may depend on what type of ground beef or ground meat you use if you will need to raise the meat off up the bottom of the crockpot or not.
I made my crockpot meatloaf with a Mexican Flavor, but really I think any meatloaf recipe would adapt well for the crockpot.

Crock Pot Taco Meatloaf
Make meatloaf easy by making it in the crock pot.
Ingredients
- 1 egg
- 1/3 cup taco sauce ( You can use homemade taco sauce see note below.)
- 1 cup crushed tortilla chips
- 1/2 cup shredded cheddar cheese
- 2 tablespoons taco seasoning ( I use homemade taco seasoning see note below )
- 2 pounds ground beef
Instructions
- In a large bowl combine all the ingredients and form into a loaf.
- Place loaf in the crock pot. You may want to place some onions or some rolled-up foil into the bottom of the crock pot if your meat it not really lean.
- Cook on low about 6 hours or until meat is done. This may vary depending on your crock pot.
- Carefully remove from crock pot. Mine came out in two pieces, but it was fine and I was still able to slice it.

I have always loved cooking with my crockpot! But, almost 2 years ago when our son was born, I started cooking way more stuff in it because it is so effortless when my day gets away from me with the baby, etc. I have cooked meatloaf in it a couple times, its the only way I cook it now. I also have changed to cook many of our favorites in the crockpot as well for ease. For example, I do enchiladas, lasagna, spaghetti, baked potatoes and the usual suspects like soups, chilis. Next I want to try hamburgers! Anything that is super easy, saves me time, and involves no mess (I use Reynolds Slow Cooker Liners), I am all for!
