During the summer I love to cook quick and easy meals that don’t heat up the kitchen.
I would be perfectly happy with a light dinner, or a salad for dinner, but my husband and kids usually disagree with me on that one. They still enjoy a regular full meal, even during the heat of the summer.
Over time I have developed a few quick and easy recipes that don’t involve heating up the kitchen but are still hearty and filling meals.
Today’s recipe is an example of that. It is fun version of a classic sandwich. It is simply a bacon and egg salad sandwich.
Think egg salad sandwich with bacon mixed in. YUM! Bacon really does make everything better doesn’t it. 🙂

This looks YUMMY, but I think I will try it by halving the recipe first. I don’t want to have a lot of leftovers if no one will eat it. Of course, if I half it, then everyone will gobble it down. Thanks for submitting….I love this website.

Still waiting on your how-to-cook-bacon post!

I lay mine out on a cookie rack that’s on a jellyroll pain, pop in a 350 degree oven and bake till browned. If making smaller amount I just lay them on a smaller pan, I don’t have a rack for it.

When trying to ziplist this, it takes me to a crock pot beef stew!!

Thanks for letting me know. I will contact Ziplist to get that fixed. It looks like it is doing it just from my homepage. If you go directly to the post here https://www.lynnskitchenadventures.com/2012/07/bacon-and-egg-salad-sandwiches.html it saves it right, at least it did for me when I just tried it. I hope that helps.

Lynn, oh my you forgot the dill. How can you have egg salad without dill…lol
Ham and egg salad is also very good.

I have to add sweet pickles to mine. I can’t have egg salad without my pickles. We’ll see how well it gels with bacon though… 😉
