If you follow me on Facebook then you might have read this update last week.
I tried a new recipe for dinner last night for my cooking through my collection series. It was one of those really quick and easy type ones and it contained hot dogs. I was not that impressed with the recipe. It was ok, but I was not sure it was worth sharing. My 10 year old son though had 4 helpings of it. I think this means I need to share the recipe on Monday. 🙂 Any meal that gets a 10 yo boy to eat 4 helpings needs shared.
So, today I am sharing a quick and easy, very kid friendly type meal. Because really any meal that a ten year old boy eats four helpings of must be pretty good.
This Chili Corn Dog Pie comes from the The Dinner Doctor. The Dinner Doctor Cookbook is by the same author that did the The Cake Mix Doctor Cookbooks. I love the Cake Mix Doctor Cookbooks. The recipes are an easy way to turn a cake mix into something special.
I am not sure when I got the The Dinner Doctor cookbook, but I have had it for awhile. It is a great cookbook for quick and easy recipes, but if you are looking for whole foods, no processed foods, etc., then this is not the cookbook for you.
Don’t get me wrong, I have made many of the recipes in this cookbook, but most of them are not the healthiest. Kid friendly yes, healthy, not really.
What I do love this cookbook for is recipes like today’s recipe. They are very quick and easy and kids love them. Not only that, many of the recipes are great for cooking with kids.
This Chili Corn Dog Pie is a meal that not only will kids love, they will enjoy cooking it as well. And in my opinion recipes like that are worth keeping.
If you have the The Dinner Doctor I would love to hear your thoughts on it.

I have some leftover chili and leftover hotdogs in the fridge that I was wondernig what to do with. This sounds like it might be dinner tonight! Thanks so much, Lynn!!!!
Lynn
I am glad I can help you use up your leftovers. I hope you enjoy it!

You know, I have been hating serving my little girl hot dogs. But when “good ones” go on sale, I will splurge because good hot dogs are so good. (They ARE the price of inexpensive beef steaks.) But if a few pieces of hot dog scattered under a cornbread topping will get my picky eater to chow down, I am willing to give this a try. If you start with homemade chili, it can’t be all bad.
Lynn
I agree and try to buy the nicer ones if I can. And yes, I think you could easily use less meat on this and it would still be great. I hope your kids enjoy it.

It DID work with fewer hot dogs. I had between 2-3 cups (give or take) leftover homemade chili (extra veggies sneaked in). I chopped 2 bun-length hot dogs over the chili in a 9-inch pie plate. The topping was the just right amount for the round pie. I also only added cheese the last 5 minutes of cooking.

It does sound like a kid and a man pleaser. Yummy. It can be a sometimes treat and homemade chili would make it less unhealthy. If you have small or medium children, remember to cut the hotdog in such a way as to reduce the risk of choking. When my son was little, I was always “scared” of hotdog.
Lynn
Yes, cutting hot dogs smaller is important with smaller kids. Thanks for mentioning that.

I love Anne Burns books:) I even have Cooking in the New South which was autographed April 14 1984! I was too young to remember but my mom had it signed for me. We live in Nashville so it used to be common to see her around, although I’m not totally sure she still lives here. You’re right they aren’t necessarily the most healthy but they are kid friendly both in taste and making. My 11 yr old daughter loves to cook for us but she needs a little guidance. For instance she put slivered almonds in pancakes she made recently and while they didn’t taste bad I couldn’t for the life of me figure out what I kept crunching on!!!!!
Lynn
I have not seen the Cooking in the New South book by her, but that sounds like a good one. And I love that your daughter likes to experiment in the kitchen. Good for her! She will quickly start learning what goes with what and I bet she will come up with all sorts of delicious things.

I saw on Amazon today that she has a new book, Unbelievably Gluten Free, which will be coming out late October which sounds like the GF version of the Dinner Doctor! Yay 🙂 Cant wait to check it out.

I’m going to make my own chili and then try this!

My family loved this!!

I love that this is naturally gluten free! I like to buy Oscar Mayer Selects Turkey hot dogs (they don’t have nitrates), and aren’t too expensive. Thanks for the recipe, I’m pinning it. 🙂
Lynn
I agree, I love meals like this that are normal food that happens to be gluten free. I have not tried those hot dogs, but will have to look for them at the grocery store. Thanks!

You’re welcome. 🙂
