Pizza Grilled Cheese Sandwiches have all the flavors of pizza in an easy to make grilled cheese sandwich.
Friday night pizza is a family tradition at our house. We occasionally miss a week, but in general Friday dinner is pizza.
I recently had a crazy busy Friday though and knew pizza was just not going to happen that night. I did not have time to make the dough and I did not have any made up ahead of time. Not wanting to disappoint my kids I knew I had to come up with something pizza like for dinner that they would enjoy.
Grilled cheese sandwiches are a favorite of mine, so I thought why not make a pizza sandwich. I could easily use the flavors of pizza, but in a sandwich. I knew the kids would love it and it would save me a ton of time, which would give us a pizza night with the work of pizza. So, grilled pizza sandwiches were created.
And my kids loved these. They will now be a regular meal at our house and will work perfectly for those busy Fridays that I do not have time to make regular pizza.
I made these on my electric griddle, but you could easily make these as oven grilled cheese as well.
If you have a weekly pizza night, I encourage you to give these a try. They are delicious and fun!

Yum! We make a version here, too!
How do you store the pizza dough that you make ahead?
I often make it up in the morning and let it rise in the fridge all day. I bring it out a little bit before needing it and press it out cold. I let it warm up some, maybe 20 minutes or so before baking. I have baked the cold dough, but it does a little better closer to room temperature. It works great for busy days.
I would absolutely love these, Lynn! I am always pizzafying things like omelets, tortillas, etc. Great idea! 🙂

Brilliant idea! I make pizza quesadillas for my boys sometimes but never thought to make pizza grilled cheese. I’ll have to add this to my rotation of quick and easy dinners.
I like both the pizza grilled cheese and pizza quesadilla ideas… I’m seeing both of them in my future, so thanks for sharing ladies 🙂 And it’s making me think… other pizza toppings could be mixed with mozzarella in a grilled cheese or quesadillas, too. Ham, pineapple & green pepper pizza is my fave, so I might need to layer those in a grilled cheese or quesadilla to dip in pizza sauce. Too bad it’s almost lunch time but I’m stuck at work with the chicken casserole leftovers from last night, or I might be whipping these up now 🙂
My husband has loved pizza quesadillas for awhile now. He likes pepperoni, olives, onions, and bell peppers in them. I’ll have to try a sandwich version and see what what thinks 🙂
We do the same basic idea with omelettes, using green pepper, black olive slices, green onions, either pepperoni and ham or just plain pepperoni for the filling once the omelette has cooked a bit. Then I turn the heat off under the pan and put the cheese slices on top of the omelette. We use pepper jack cheese if we are eating this for a “supper meal in a hurry” but it’s a little too much spicy stuff in the morning, so then we use provolone or mozzarella slices.
My DH requests this at least once a month. I had to order some dehydrated red and green onion bits because I don’t always have fresh stuff on hand (especially in winter in this part of the country) so I keep a small baggie of re-hydrated peppers in my fridge at all times.
Ack, I meant to say “red and green pepper bits”. Sorry for the confusion.
