Cinnamon Roll Baked Oatmeal anyone?!
I mean really, the flavors of a cinnamon roll mixed into a bowl of oatmeal, how can you go wrong?! Even non oatmeal lovers will enjoy this one.
This cinnamon roll baked oatmeal is like a homemade gourmet version of those little instant oatmeal packets. But this is so easy to make. Really easy.
It is almost as easy to makes as those little packets, but the taste is so much better.
I have been thinking about a cinnamon roll baked oatmeal for awhile, but did not actually try making it until recently. I took one bite of this and told my kids that I had a new favorite baked oatmeal. It was that good.

This is perfect for the holidays. Make up a pan of this and a pan of one of my other baked oatmeal recipes and you will have a delicious holiday breakfast.
And you can make this ahead of time. Make this up and spread it into the pan. Refrigerate overnight and bake in the morning. A quick and easy breakfast your family will love.

Cinnamon Roll Baked Oatmeal
Cinnamon Roll Baked Oatmeal has all the flavors of a cinnamon roll in a bowl of oatmeal.
Ingredients
- 3 cups quick cooking oats- (Use gluten free quick cooking oats for gf version)
- 1/2 cup brown sugar
- 1 cup milk
- 2 tablespoons butter, melted
- 2 eggs
- 2 teaspoons baking powder
- 3/4 teaspoon salt
- 2 teaspoons vanilla
- 3/4 cup heavy cream, you can use milk, but cream makes this richer and creamier
- 1 teaspoon cinnamon
Glaze
- 1 cup powdered sugar
- 3 tablespoons milk
- 1/4 teaspoons cinnamon
Instructions
- Preheat oven to 350 degrees.
- In a large bowl combine all ingredients, except glaze, and stir until well combined.
- Spread into a 9x13 pan or into individual ramekins.
- Bake for 20-25 minutes for 9x13 pan and 12-14 minutes if using ramekins.
- Combine glaze ingredients and stir until smooth. Drizzle over hot oatmeal.
- Serve and enjoy!
Notes
For gluten free version use gluten free oats.

Any thoughts on making this without eggs? Possibly with a flax egg?

I think it would probably work with no egg or egg substitute. If you did no egg I would make sure to add in some extra moisture. The texture might be a little different, but I think it would work if you can’t have eggs.

Yes, you can use ground flax. I mix 2 tablespoons of ground flax with 1/4 cup of warm water before adding it to the other ingredients. It holds up great! I also substitute 1 cup of almond milk for the milk and cream. This makes it drier, like a breakfast cookie. I store it in the fridge and eat it cold like a breakfast cookie or granola bar. It is my favorite breakfast recipe!

I’m thinking about trying a half-batch of this and making it in an 8×8 pan. Any idea how long I’d need to bake it for in that size pan? =)

Yes the leftovers freeze great. I freeze baked oatmeal all the time and my kids reheat it for breakfast. I am glad you enjoyed it!

Found this link via Pinterest and thought it looked amazing! Mixed it up last night and baked it this morning. I have four kids under 5, so having a “special” breakfast that can be cooking while I’m changing diapers, etc., in the mornings is a HUGE plus. Thanks! Will definitely make this again! I just made this with coconut oil subbing the butter, and all whole milk instead of milk and heavy cream (bc that’s all I had!) I am eating it without the glaze bc I”m lazy and hungry…yummy! Like a better version of Soft Baked oatmeal bars that Quaker sells. The applesauce sounds like a great sub also! Next time 🙂

Yes you can easily use regular oats the texture is just a little different, but it does work.

Oh. My. Gosh. The Cinnamon Roll Baked Oatmeal is so freaking good!!! I used old fashioned rolled oats for a chewy texture. Unfortunately, I didn’t have heavy cream available, but used milk instead. I served the baked oatmeal with some sausage links. My apartment smelled heavenly. I’m looking forward to enjoying this baked oatmeal for breakfast for the next few days. Thank you, Lynn!!! 🙂
