I know many of you need quick and easy gluten free recipes just like I do. I am always looking for new quick and easy gluten free recipes to serve my family and love sharing them with you, especially when it comes to gluten free dinner ideas.
I recently mentioned that I plan to share more easy gluten free dinners over the next few months. Some of the gluten free recipes I share will be new gluten free recipes. For other recipes I will be redoing old recipes to make them gluten free. Often times it only takes a few steps to make a family favorite gluten free.
I shared a gluten free slow cooker swiss steak a few weeks ago that is so easy to make. I love meals that I can put in the crock pot in the morning and have ready at dinner time. The swiss steak I shared is just that. You can put it in the crock pot early in the day and it will be ready for you at dinner time.
Today I am sharing another one of our favorite easy gluten free dinners. It is taco pasta casserole. I shared a few years ago how I adapt the original recipe to gluten free, but I never posted it in a recipe form, so today I am doing that for you.
For those that have been gluten free for years the steps for converting recipes to gluten free may seem pretty easy, but one of my goals with this series is to help those new to gluten free. Those that are overwhelmed with what they can or can’t eat. Those that are still in the figuring it all out stage.

This taco pasta casserole is one of those recipes that is easy to convert to gluten free, but there are several things that you have to pay attention to.
The original recipe for taco pasta contained taco seasoning. Taco seasonings often contain gluten so you must read labels or make your own. When it comes to seasonings and seasoning packages I can’t emphasize enough that you need to read labels. So many recipes can be made gluten free simply by reading labels to find one that is gluten free.

Gluten Free Taco Pasta Recipe
A delicious gluten free way to change up taco night.
Ingredients
- 1 pound ground beef
- 1 package gluten free taco seasoning or homemade taco seasoning
- 1 can (15 ounces) tomato sauce
- 8 ounces gluten free shell macaroni or other gluten free pasta, cooked according to directions.
- 1 can (4 ounces) chopped green chilies
- 1 1/2 cups shredded cheddar cheese
Instructions
- In a skillet, brown ground beef over medium heat.
- Drain and add taco seasoning, tomato sauce, and green chilies.
- Stir in cooked macaroni. Place in a 9x13 pan or casserole type dish.
- Top with cheese. Bake at 350° for 30 minutes or until heated through.
