Hamburger soup is a pretty classic and simple soup. I remember my mom making various versions of it when I was a kid. I don’t think she ever really followed a recipe. She used the vegetables that she had on hand and used ground beef because it was a cheap cut of meat and it was easy to stretch in a soup.
There are many recipes for hamburger soup out there and I often change it up, just like my mom did, to use what I have on hand..
I recently made a crock pot version and my family loved it.
Well, okay I will admit that my son was not a fan of this. There are too many things that he does not like in it, but he is my picky eater and I don’t count it when he doesn’t like something. If he had his way we would eat pizza, hamburgers, and hot dogs every night. The rest of the family really enjoyed this.
This recipe reminded me more of a stew than a soup, so although it is a pretty basic hamburger soup, I am calling it stew. It is hearty and filling and more stew like in my opinion.
The day I made this soup I had a couple of sweet potatoes that needed used up, so I used them in place of regular potatoes. My husband and I really liked the flavor they added to the soup, so I will definitely do that again. If you don’t have sweet potatoes, just use regular potatoes instead.
I also had a couple of cups of shredded cabbage in the fridge that needed used up, so I added that to the soup as well. We really like that addition as well and it was a good way to use up something that might have gone to waste otherwise.
You probably get the idea here that hamburger soup/stew is one of those meals that you can just add whatever you want to. You can add peas or corn to hamburger soup. I have even had it with green beans added. This really is a use what you have on hand type of meal.
The spices that I used in this lean towards the spicy Mexican side with chili powder and cumin, but again you could easily add Italian type seasonings to this instead and it would still be great.
Crock Pot Ground Beef Stew
Crock Pot Ground Beef Stew is a filling and hearty soup for any time of year.
Ingredients
- 2 pounds ground beef
- 1 onion, diced
- 1 can beef broth, I use a gluten-free or homemade beef broth
- 2 cups water
- 2- 14 ounce cans diced tomatoes
- 2 potatoes or sweet potatoes, peeled and diced
- 4 carrots, peeled and cut into pieces
- 1 bell pepper, diced
- 2 cups shredded cabbage
- 2 cloves garlic minced
- 2 teaspoons ground cumin
- 1 teaspoon salt
- 2 teaspoons chili powder
- 1 teaspoon dried basil
Instructions
- In a skillet cook ground beef and onion until beef is cook through and onion is tender. Drain off any fat.
- Add ground beef mixture and remaining ingredients to crock pot. Stir well.
- Cook on low for 6-7 hours or until vegetables are tender.

Sounds wonderful! With the high price of ground beef, I suggest using only 1 lb and making this a meatball stew instead. Affording meat has become a real concern for many, myself included.

Yes you could easily do that. Or decrease the meat and add more vegetables to it. Another ground meat like ground turkey or chicken would work as well and is often cheaper than ground beef. I have used ground venison in it because I have that on hand in the freezer since my family hunts. It really is one of those recipes that is easy to change up. Thanks for the meatball suggestion it is a good idea!
