Instant Pot Green Chili Rice is so easy to make. It is a great side dish for so many meals.
Mexican type of food is one of my family’s favorite meals. It is usually quick and easy to make and everyone enjoys it. Even the picky eater of the family enjoys Mexican or Tex Mex type of meals.
One of the other things that I love about Mexican type food is that it is easy to do meatless. Even in my family of meat lovers, I can get by with an occasional meatless Mexican food dinner.
Mexican food is also a way to change up your basic beans and rice.
Beans and rice are often thought of as money-saving foods. There is a reason people say a rice and beans budget. But rice and beans don’t have to be boring. You can easily change up rice and beans and give them all kinds of flavors.
That is the good thing about rice and beans. They are plain foods on their own, but you can add all kinds of things to them to give them all kinds of flavors.
This recipe for green chili rice is an example of how I changed up a simple dish. We love basic rice and eat it often.
I love to make Mexican Rice, Green Chili Rice, Asian Rice, and Cheesy Baked Rice, but I wanted to adapt a few of my basic rice recipes for the Instant Pot.
I knew that the Instant Pot would help make dinner easy on busy days. This Green Chili Rice is one of the recipes I came up with for an easy side dish.
It is full of flavor and is great on its own. It also works served with beans and chips for a simple lunch or dinner. Or you can serve it as a side dish to just about any Mexican meal.
Ingredients
- long grain white rice
- chicken broth
- canned chopped green chilies
- water
- lime juice
- cumin
- oregano

Instant Pot Green Chili Rice
Make green chili rice easy in the Instant Pot.
Ingredients
- 2 cups long grain white rice
- 1- 14.5 ounce can chicken broth
- 2 -4 ounce cans chopped green chilies
- 2 tablespoons water
- 2 tablespoons lime juice
- 2 teaspoons cumin
- 2 teaspoons oregano
Instructions
- Rinse rice. Don't skip this step. It really does cook better when you rinse it.
- Pour rice in the Instant Pot.
- Add remaining ingredients and stir to combine.
- Lock the lid and set the steam valve to sealing.
- Cook on manual for 12 minutes.
- Once done let rest for 10 minutes.
- Carefully release any pressure that is left.
- Open the Instant Pot and serve.
Notes
For gluten free version be sure to read labels on ingredients like chicken broth to make sure that your ingredients are gluten free.
