A cross between caramel corn and Chex mix, this Caramel Chex Mix is sure to become a new favorite.
I came up with this recipe years ago. I took my favorite caramel corn recipe, which came from my husband’s grandmother, but instead of popcorn, I used Chex cereal.
The result was amazingly good.
It is kind of like regular Chex mix in the fact that it is a bit addicting. You just eat a little here and there and the next thing you know you ate way too much.
We love this for family movie night. My kids like it because it is different than our normal snacks like popcorn or even caramel corn. They would love it if I made this more often.
I use just Chex cereal in this to keep it gluten free, but you could easily add other things to it.
I have added M&M’s to it before and we enjoy it that way. If you add M&M’s add them after you bake it and it has cooled.
Ingredients
- corn Chex
- rice Chex
- brown sugar
- corn syrup
- butter
- cream of tartar
- baking soda
Caramel Chex Mix
Change up Chex mix with this caramel Ches Mix recipe.
Ingredients
- 9 cups corn chex
- 9 cups rice chex
- 2 cups brown sugar
- 1/2 cup corn syrup
- 1 cup butter
- 1/8 teaspoon cream of tarter
- 1/2 teaspoon baking soda
Instructions
- Place Chex into one very large bowl or pan, or 2 medium to large bowls.
- In a pan bring the brown sugar, corn syrup, butter, and cream of tarter to a boil. Boil for 5 minutes. Stir in the baking soda quickly and remove from heat.
- Pour over Chex and stir well. The caramel sauce should coat the Chex. You need to stir this fast because it will start to harden.
- Spread onto two baking sheets (lining the pans with foil or a silpat mat will make clean up easier) Bake at 200 degrees for 45 minutes. I rotate the sheets around and stir every 15 minutes.
- This is not crisp when you first take it out. It will harden up as it cools on the sheets. Break up into pieces and place in a bowl and serve.

I have been making this for quite some time and every time I take it some where I never have any to take home. My recipe does not call for cream of tarter-just in case you don’t have any-it turns out fine. Also, the recipe I use just calls for a 17 oz box of cereal, no need to measure. I also use Crispix-just depending on what cereal is on sale!

@Lori, I have not tried this without cream of tarter, but cream of tarter is an old fashioned trick that makes caramel corn turn out even better. Most people don’t use it now, but I find it really helps make the caramel work better. Although, like I said I have never tried it in the specific recipe without it, for caramel corn it makes a huge difference.

I do the same recipe, I just never put it in the oven. Stir and coat well. Pull part into small pieces before cools (careful hot, but cools quickly). Allow to cool on wax paper. Enjoy!

Oh dear – when I added the baking soda it suddenly started to foam up and overflowed even after removing from heat – what a mess. Did not expect that!!

Anyone please help. Is this real hard like peanut brittle after it’s done and cooled? I cannot make if it is hard bacause of my teeth and grandsons braces. Please hurry going to the store Saturday. Thank you!!

It is not as hard as peanut brittle. I would say it is more like caramel corn.So it is hard, but not was hard as a peanut brittle would be. I am not sure how well it would work with braces. I hope that helps. Have you ever made muddy buddies or my snow buddies? They are not the same as this, but a similar idea and they would be easier to eat with braces.
