It is summer. That means it is the best time of year to serve salad for dinner. If your family is anything like my family they don’t want a wimpy salad for dinner. If I am going to serve salad as a main dish it needs to be hearty and filling.
This fajita salad is just that. Not only is it delicious, it is a filling main dish salad.
Fajita salad is just what it sounds like. It is all the flavors of fajitas in the form of a salad.
This version of fajita salad uses ground beef. Ground beef is not the typical meat that you use for fajitas, but for this salad I was looking for a salad similar to a taco salad. The ground beef did just that.
Ground beef is also something that I almost always have on hand in the freezer, so this is a salad that I can make anytime.
I serve this with a homemade salad dressing, but you can serve this with whatever dressing or toppings that you want.
All the flavors of fajitas in this delicious main dish salad.
- 2 pounds ground beef
- 2 teaspoons chili powder
- 1 teaspoon dry mustard
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 teaspoon ground cumin
- ½ teaspoon coriander
- 2 tablespoons oil
- 2-3 green yellow, orange, bell peppers sliced
- 1 onion peeled and sliced
- Lettuce
- cheese etc for serving
- 1/4 cup oil
- 1/4 cup lime juice
- 2 teaspoons honey
- 1/8 teaspoon chili powder
- 2 cloves garlic, minced
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/8 teaspoon salt

Heat oil in a pan or cast iron skillet. Once pan is hot add onion and cook over medium heat until tender and slightly browned. This takes about 5 minutes.

Add peppers and cook 3-4 minutes or until slightly tender. Remove peppers and onions from the pan and set aside.

In the same skillet cook beef until browned and done. Drain off any fat.

Add spices to the meat and stir well.

In a small bowl whisk together dressing ingredients.

Serve meat, peppers and onions, over lettuce with dressing.
