It is Friday and we made it through another week! 

Right now I am very thankful to live in the country. There are downsides. One is that we rarely see or talk to our neighbors, which is even more isolating during the current times.

However, having lots of room to get outside, walk, and just take a break from each other 🙂 is something that I am very grateful for right now. 

I can’t imagine what it is like for those that are trying to social distance when living in an apartment or the middle of a city. 

It has been two weeks since I went to the grocery store. We would have been fine for awhile longer, but there were a few things that we getting low on, like fresh fruits and vegetables. I decided it was time to go again.

I decided to do an order from Sam’s Club for pickup. They had everything I wanted except one item. I had to place my order early in the day, but I was able to get a pick up time the next day. 

I also made it to Braums for eggs, milk, and a few other things. Between the two stores I got everything I wanted. Hopefully we can go another two weeks before I have to shop again. 

Right now I am finding myself cooking a lot of my mom’s recipes. The recipes I grew up eating. My mom’s recipes are inexpensive to make and use basic ingredients so they are perfect for right now. 

This week I made my mom’s lemon bars. I actually made the gluten free version of my mom’s lemon bars. The gluten free version tastes as good as the real thing.

Gluten Free Bread without Yeast

I have been working on new gluten free recipes. This week I shared a Gluten Free Bread without yeast over on GF Kitchen Adventures. This recipe is so good! It slices well so it works for toast and sandwiches. It is also perfect for right now when yeast is hard to find.

I also shared my current reads over on From Our Bookshelf. Right now I seem to be reading a lot of books about difficult times. There is something about reading other people’s difficulties that make current difficulties not seem so bad. 

Or maybe it is just a reminder that we can do this. Others have been through much worse times. Reading how others overcame hard things gives me the encouragement that I need to keep going right now.

Have I mentioned that we have two new puppies! Because life is not exciting enough we got two puppies. It is a good thing that they are cute. Puppies are a lot of work. It has been a little easier since we are all at home so much right now, but puppies are still work. For example the pictures below. 

Don’t worry that is not an iphone. It is an old ipod that he found. But still…You can’t turn your back on a puppy. They are kind of like having a three old. 🙂 It is a good thing they are cute.
