BBQ Chicken Salad contains meat, as is obvious from the title, but it is mixed with coleslaw and sauce to make a delicious main dish salad.

I had trouble coming up with the name for this. It contains cabbage and is similar to coleslaw, but since it contains bbq sauce and meat, it is also very different than coleslaw.
No matter what you call this it is a simple and delicious meal!
Most main dish salads contain lettuce, but cabbage is the star of this recipe. The coleslaw mix makes this easy to make and gives the salad a nice crunch.
It also holds up well for a day or two in the fridge, so it is a great make ahead recipe. You can make this and serve it right away or you can make it earlier in the day or the day before you serve it.
This salad is also gluten free as long as your bbq sauce does not contain gluten. It is normal food that just happens to be gluten free.

BBQ Chicken Salad
BBQ Chicken Salad is a quick and easy dinner. It is also gluten free food that is normal food that happens to be gluten free.
Ingredients
- 1/4 cup bbq sauce
- 1/4 cup mayonnaise
- 1 tablespoon lemon juice
- 2 teaspoons dijon mustard
- 1/2 teaspoon black pepper
- 3 cups cooked, shredded, chicken ( Canned chicken works too)
- 1 - 12 ounce bag coleslaw mix
Instructions
- In a large bowl whisk together bbq sauce, mayonnaise, lemon juice, mustard, and pepper. Whisk until smooth.
- Stir in cabbage and chicken until well coated.
- Serve immediately or refrigerate until serving.

This is one of those recipes I would make when I need something really quick. When we ate it last week I served it with potato chips and fruit. that is not the most creative, but it worked. 🙂 During the summer when it is really hot and we like main dish salads I will probably serve it the same basic way. You could also add some sort of bread or roll for a side to make it more filling. You could also serve it with some grilled chicken or something like that. It wouldn’t really be a main dish salad that way, but it would add more to the meal. Iknow that is probably not a lot of help. With recipes like this I usually keep the meal pretty simple.
