It is no secret that I love baked oatmeal. I have shared over twenty recipes for baked oatmeal over the years. I have been sharing them on my website for fourteen years, but I was making baked oatmeal long before that.
Occasionally I realize that I make a version of baked oatmeal that I have never shared with you. This recipe for cinnamon raisin baked oatmeal is an example of that.
I have made this baked oatmeal quite a few times over the years, but I recently realized that I had never shared it. Today I am fixing that.
How To Make Baked Oatmeal
The best way I know how to describe baked oatmeal is that it is a cross between a bowl of oatmeal and a dessert. It is a breakfast casserole of sorts.
There are a lot of different directions for making baked oatmeal. Some are more complicated than others.
I have tried different ways to mix together the ingredients and I have found that it doesn’t matter. You can just dump it all in a bowl, stir to combine, and spread it in a pan.
You don’t have to mix the wet ingredients separately from the dry ingredients like many recipes say. Save yourself some time and stir it all together at once.
Is baked oatmeal gluten free?
As long as you use gluten free oats and read labels to make sure that your ingredients are gluten free it is a delicious gluten free breakfast!
Ingredients
- quick cooking oats or gluten free quick cooking oats
- brown sugar
- milk
- butter
- eggs
- baking powder
- salt
- vanilla
- cinnamon
- powdered sugar, optional
Cinnamon Raisin Baked Oatmeal
All the flavors of a cinnamon raisin oatmeal cookie in the form of baked oatmeal.
Ingredients
- 3 cups cups quick cooking oats or gluten free quick cooking oats for gf version
- 1/2 cup brown sugar
- 1 1/2 cup milk
- 2 tablespoons butter, melted
- 2 eggs
- 2 teaspoons baking powder
- 3/4 teaspoon salt
- 2 teaspoons vanilla
- 1 teaspoon cinnamon
- 3/4 cup raisins
GLAZE
- 1 cup powdered sugar
- 3 tablespoons milk
- 1/4 teaspoons cinnamon
Instructions
- Preheat the oven to 350 degrees.
- In a large bowl combine all ingredients, except glaze.
- Stir until well combined.
- Spread into a 9x13 pan or similar sized pan.
- Bake for 20-23 minutes.
- Combine glaze ingredients and stir until smooth.
- Drizzle over hot oatmeal.
- Serve and enjoy!
