This gluten free carrot bread is a gluten free version of a classic recipe.
I am not sure if this should be called carrot bread, carrot loaf, or carrot cake. It is basically a carrot cake batter, baked in a bread pan.
It is easy and delicious and so good that you will not know that this is gluten free.
Seriously I served this at a Bible Study at our house and I was the only one that ate gluten free. Everyone loved it. Yes, even those that do not eat gf enjoyed this.
Ingredients
- Bob’s Red Mill 1 to 1 Gluten Free Flour Blend – Other blends may work, but this is the only one that I tested the recipe with
- baking powder
- baking soda
- salt
- ground cinnamon
- oil
- eggs
- brown sugar
- sour cream – regular sour cream really does work best in this to keep the bread moist and delicious
- vanilla extract
- carrots
- walnuts or pecans, optional
Gluten Free Carrot Bread
A classic carrot bread made gluten free.
Ingredients
- 1 1/2 cups Bob's Red Mill 1 to 1 Gluten Free Flour Blend
- 1 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup oil
- 2 eggs
- 1 cup light brown sugar
- 1/3 cup sour cream
- 1 teaspoon vanilla extract
- 1 1/2 cups peeled and shredded carrots
- 1/2 cup chopped walnuts or pecans, optional, but good
Instructions
- Preheat oven to 350 degrees.
- Grease a loaf pan and set aside.
- In a bowl combine gluten free flour, baking powder, baking soda, salt, and cinnamon. Set aside.
- In another bowl whisk oil, eggs, brown sugar, sour cream, vanilla, and carrots.
- Stir in flour mixture just until combined.
- Stir in nuts if using.
- Spread the batter into prepared loaf pan.
- Bake for 55-60 minutes or until toothpick inserted into center comes out clean.
- Let cool in pan for 5-10 minutes. Remove from pan to wire rack to cool.
- Glaze if desired with recipe in notes.
Notes
Other gluten free blends may work, but I have only tested the recipe with Bob's Red Mill 1 to 1 gluten free blend.
For glaze whisk together 1/2 cup powdered sugar and 2-3 teaspoons milk or until desired consistency for drizzling over bread.
