Change up your basic quiche with this crustless cottage cheese quiche recipe.
Cottage cheese is having a moment. A major moment from what I have seen. I think TikTok is behind the current popularity of cottage cheese.
However, many of us have been eating cottage cheese for years. If you are in your forties or fifties you probably grew up eating cottage cheese often.
Even if you are in your twenties like my kids you might have grown up eating it. My kids used to love to eat cottage cheese for breakfast instead of yogurt.
Many of us have been eating and loving it for years.
Cottage cheese is not new or trendy to us. Or maybe we were just years ahead of the trend.
I have been making versions of cottage cheese quiche for years. I think the original recipe may have come from Taste of Home, but I have adapted this basic crustless sausage quiche many ways over the years.
Sometimes I add cooked bacon, sausage, or ham, but often I make it meatless like the version I am sharing today.
I also love that this quiche is crustless so it is easy to adapt to gluten-free since it doesn’t have the traditional quiche crust. All you have to do is use a gluten-free flour blend instead of regular flour in the egg mixture.
Ingredients
This recipe serves quite a few since it makes two quiches. You may want to half the recipe if you are just serving a few and do not want leftovers.
- eggs
- cottage cheese
- shredded Monterey Jack cheese
- shredded mozzarella cheese or cheddar cheese
- all-purpose flour or for gluten free version use a gluten free flour blend
- butter
- baking powder
- canned chopped green chilies
Cottage Cheese Quiche
Cottage cheese is added to this crustless quiche to make it an easy and delicious breakfast, lunch, or dinner.
Ingredients
- 12 eggs
- 2 cups cottage cheese
- 3 cups shredded Monterey Jack cheese
- 1 cup shredded mozzarella cheese or cheddar cheese
- 1/2 cup all-purpose flour ( for gluten free version use a gluten free flour blend)
- 1/4 cup butter, melted
- 1 teaspoon baking powder
- 1 - 4 ounce can chopped green chilies, drained, optional but good
Instructions
- In a large bowl beat together eggs, cheese, flour, butter, and baking powder until well combined.
- If adding green chilies or other add-ins also stir them in.
- Transfer to two greased 9-in. round baking dishes, quiche pans, or 8x8 square pans. The pans will be full.
- Bake at 375° for 35-38 minutes or until a toothpick or knife inserted near the center comes out clean.
- Let cool for five minutes. Cut and serve.
Notes
For gluten free version use gluten free flour blend and read labels to make sure your ingredients are gluten free.
Cooked bacon, sausage or ham can be added to the egg mixture.
