I was recently craving an apple fritter doughnut. I have not had one in fifteen years. I have no idea why I suddenly wanted one, but I did.
Making a homemade gluten-free apple fritter is probably possible, but I wanted something a little easier to make.
I decided that a quick bread with the flavors of an apple fritter was just what I needed to satisfy my apple fritter craving.
I found a few recipes online to get ideas. Then I went to work figuring out how to make a gluten free apple fritter bread.
It took a little bit of work, but the result was delicious!
This bread really does have all the flavor of an apple fritter in an easy to make quick bread.
It is moist and delicious. The cinnamon glaze drizzled on top gives it an extra taste and texture that makes it closer to the real thing.
This bread is so good no one will know that it is gluten free!
Ingredients
- Granny Smith or other baking apples
- brown sugar
- ground cinnamon
- sugar
- butter
- eggs
- vanilla extract
- milk
- Bob’s Red Mill 1 to 1 Gluten Free Flour Blend – Other blends may work, but for best results use Bob’s Red Mill 1 to 1 Gluten Free Flour Blend
- baking powder
- salt
- powdered sugar
Gluten Free Apple Fritter Bread
The flavors of an apple fritter doughnut in an easy to make quick bread.
Ingredients
- 2 cups of peeled and diced granny smith apples or other baking type of apple
- 1/2 cup brown sugar
- 1 tablespoon ground cinnamon
- 2/3 cups sugar
- 1/2 cup butter, room temperature
- 2 eggs
- 2 teaspoons vanilla extract
- 1/2 cup milk
- 1 1/2 cups Bob's Red Mill 1 to 1 Gluten Free Flour Blend
- 2 teaspoons baking powder
- 1/2 teaspoon salt
Glaze
- 1 cup powdered sugar
- 2 tablespoons milk ( use more if needed for desired texture
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat oven to 350 degrees.
- Grease a 9x5 loaf pan. Set aside.
- In a bowl, combine apples, brown sugar, and cinnamon until they are well coated. Set aside.
- In another bowl, combine gluten-free flour, baking powder, and salt. Set aside.
- In a mixing bowl, mix sugar and butter for 2-3 minutes or until light and fluffy.
- Add in eggs and mix until combined.
- Add in vanilla extract and milk. Mix until combined.
- Slowly add the flour mixture, scraping down the sides as needed.
- Stir in apples just until mixed well.
- Pour into prepared loaf pan.
- Bake for 65-70 minutes or until toothpick inserted into center or loaf comes out clean
- Let cool in pan for about 10 minutes.
- Remove from loaf pan to cool on cooling rack.
- For glaze, combine powdered sugar, milk, and cinnamon until smooth. Add more milk if needed.
- Once the loaf is cool drizzle glaze over bread.
- Slice and serve.
Notes
This recipe was tested with Bob's Red Mill 1 to 1 Gluten Free Flour blend. Other blends may work, but they have not been tested.
