March means that it is time to make some gluten free soda bread!
Soda bread is delicious anytime, but it is especially delicious this time of year. It is even better when you add cheese to it.
This recipe is one I make almost every March. It is adapted from a King Arthur Flour recipe.
I changed the cheese slightly and used Bob’s Red Mill 1 to 1 Gluten Free Flour Blend in it because that is usually what I have on hand. However, King Arthur Gluten-Free Flour Blend works excellent as well.
What Is Soda Bread?
Soda Bread, also known as Irish Soda Bread, is similar to a biscuit but in bread form.
It is a quick bread that uses baking soda and, in some recipes, baking powder instead of yeast for the leavening.
This recipe for gluten-free soda bread contains cheese. Although cheese is not a traditional ingredient in soda bread, it elevates the taste and texture of this gluten free soda bread.
This recipe would be delicious with corned beef and cabbage.
Ingredients
You can use any sharp cheddar cheese and white cheddar cheese in this recipe, but I like to use Tillamook or Cabot Farms.
- King Arthur Gluten Free Measure for Measure Flour Blend or Bob’s Red Mill 1 to 1 Gluten Free Flour blend
- baking powder
- baking soda
- salt
- butter
- sharp cheddar cheese
- white cheddar cheese
- buttermilk
- egg
Gluten Free Soda Bread
A delicious gluten free soda bread with cheese added
Ingredients
- 2 1/2 cups Bob's Red Mill 1 to 1 Gluten Free Flour Blend, see note below
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 4 tablespoons butter
- 1 cup grated sharp cheddar cheese
- 1 cup grated white cheddar cheese
- 1 1/4 cups buttermilk
- 1 egg
Instructions
- Preheat oven to 375.
- Grease an 8x8 or 9x9 square baking pan. A 9 inch round pan will also work.
- In a large bowl combine gluten free flour blend, baking powder, baking soda, and salt.
- Using a grater, grate the butter into the flour mixture. You can use chunks of butter and cut it into pieces, but a grater does work better because the pieces are smaller.
- Mix the butter into the flour until the mixture is crumbly.
- Carefully mix in the cheese just until the cheese is coated with flour mixture.
- In a small bowl or measuring cup, combine the buttermilk and egg. Stir into flour mixture just until combined and dough forms.
- Spread batter into prepared pan. The dough will be sticky, so if needed, wet your hands and press the dough to the edges of the pan.
- Bake for 40-43 minutes or until a toothpick inserted into the center comes out clean.
- You can remove the bread from the pan for serving, but I just cut and served the bread straight from the pan.
Notes
King Arthur Gluten Free Flour Blenad will also work in this recipe. Other blends may work, but they have not been tested.
