I mentioned last week that my family was going to be gone all day last Saturday. This is where they went.
They went to an OU football game, along with about 85,000 other people. The 85,000 other people is why I decided to stay home in my nice quiet house. Plus, I am not really a football fan. They however LOVED going to the game.
It has been years since my husband has gone to an OU game or any college football game. The last OU game was when he was a teenager. My husband attended OU in the 1990’s. Let’s just say those were not the best football years for OU. We lived in the OKC area the four years he was in school and we did not attend even one football game. If you are an OU fan you probably remember those years. Or you probably don’t want to remember them. 🙂
My husband has really wanted to take our kids to a game since they are at an age to really enjoy a college football game. It finally worked out to take them to last week’s game and it was a great game. They all loved it and had a great time!
I know many of you already love my baked oatmeal recipes, but I shared this picture on Facebook and on Instagram last weekend and you all loved it. Many of you said you had not tried baked oatmeal yet. It is not a great picture, but no one seemed to mind. It was a keeping it real this is what I am cooking picture and it was what we had for breakfast on Sunday.
This is what I shared.
Two pans baked oatmeal. One is banana baked oatmeal. The other one is pumpkin baked oatmeal. I will refrigerate overnight and bake in the morning for Sunday breakfast. We will reheat the leftovers for breakfast during the week. I think baked oatmeal is our favorite breakfast during the fall and winter. Both recipes are on my site along with like 15 other baked oatmeal recipes. Yes, we like baked oatmeal. And use gf oats for an easy gf breakfast.
It really is that easy. I made it up Saturday night, put it in the refrigerator, baked it in the morning, and there was enough leftover the the kids to have Monday for breakfast. If you have not tried baked oatmeal you need to. Even non oatmeal lovers, like me, enjoy it. I don’t really love a bowl of oatmeal, but I love baked oatmeal because the texture is totally different.

And to keep things very real this is what my kitchen has looked like most of the week. Well, not all those same dishes, but covered in dirty dishes, clean dishes, and piles of papers. Oh and you can even see the dirty clothes basket in the background, outside the laundry room door. I have a massive pile of laundry to do today too, but I will spare you the picture of that.
It has been a crazy week with several doctors appointments, an allergic reaction, and just everyday life. Housework has taken a backseat to everything else. So if anyone thinks I have it altogether. I don’t. Seriously, I don’t. No one does. Some days I get it all done and other days I just barely keep my head above water.
Crock pot dinners are what save me when it comes to dinners on weeks like this. These Mexican pork chops are what I made for dinner last night.
These crock pot Mexican pork chops are one of my favorite easy crock pot meals for busy days. The recipe only has four ingredients. So easy and so good. I used my casserole crock pot for cooking them yesterday and it worked great.

I love this sign that my husband put on the wall at his office. There is so much truth it in. I know people don’t always like to hear it, but life is work. Nothing is easy. We often try to take the easy way, but it rarely works out. I have said many times that one of the best things my parent’s taught me was how to work and I hope I pass that on to my kids.

Yes, remember……I took pictures of some of your “sign” boards…..that being my favorite I think! As for the oatmeal (of any kind)…..you know what I think about that!
