Apple Spinach Salad with Honey Mustard Dressing is a delicious mix of sweet and tart.
The combination of apple cider vinegar and honey in the dressing mixed with apples and dried cranberries give this salad so much flavor.
Spinach is becoming my favorite go to greens for salad. I love how fresh spinach tastes, but I also love how long it lasts after I buy it.
Right now most of us are trying to limit our trips to the grocery store. But even under normal circumstances, I have to strategically buy my produce because we live in the country and don’t have a grocery store down the street.
I love lettuce. It will probably always be my favorite salad base, but it doesn’t last long after you buy it. Spinach on the other hand will usually last a lot longer.
When I pick up lettuce at the store, I almost always grab a bag or two of spinach. It works great in my Apple Chicken Salad, my Strawberry Spinach Salad, and in this Apple Spinach Salad I am sharing today.
I love this salad just the way I am sharing the recipe. I like it best all mixed together in a bowl and served.
However, some in my family prefer to make it themselves.
Some like it tossed all together, but others like it without the apples, without the cherries, or without any fruit at all.
In order to please everyone I often just place the ingredients all out and let everyone make their own version.
Apple Spinach Salad with Honey Mustard Dressing
Apple Spinach Salad with Honey Mustard Dressing is a simple salad perfect for anytime of year.
Ingredients
- 6 cups baby spinach
- 1/3 cup feta cheese
- 1 apple thinly sliced, tart crisp apples work the best
- 1/2 cup dried cranberries
- 1/3 cup olive oil
- 1/4 cup honey
- 3 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard, if gluten free be sure your mustard is gf
- 1 clove garlic
- 1/4 teaspoon salt
Instructions
- In a large bowl combine spinach, feta cheese, apple slices, and dried cranberries.
- In a small jar or bowl, whisk together olive oil, honey, vinegar, mustard, garlic, and salt.
- Toss dressing and salad together and serve. Or serve dressing on the side and drizzle on salad for serving.
