This Chili Relleno Casserole has been a favorite for years.
It is a quick and easy dinner, that uses ingredients that I almost always have on hand.
I have made this for potluck dinners. I have served it to company and I have taken it as a meal to a sick friend. Everyone that has tried this casserole has loved it.
It is one of those very simple, yet full of flavor dishes that are perfect for a quick and easy meal.
Is Chili Relleno Casserole Gluten Free?
Yes, this is a delicious gluten free dinner. It is normal food that no one will realize is gluten free.
As long as you read the labels to make sure that your ingredients are gluten free this is a great gluten free meal to make.
Freezer Friendly Casserole
This casserole freezes great. I have doubled and tripled this many times and frozen the extra pans. It is a really easy cook once eat two or three times meal.
All you do is make the recipe and cook it as normal. Be sure to cook it in a freeze safe dish if you will be freezing in the same pan you baked it in.
Cool completely. Cover and freeze either in a pan or place in smaller containers.
Defrost all way before reheating though. The texture will be better if you defrost completely before freezing.
Reheat and serve.
Ingredients
All you need are a few basic ingredients to make this simple and delicious dinner.
- ground beef
- green pepper
- salt
- ground oregano
- garlic powder
- cheddar cheese
- Monterey jack cheese
- canned chopped green chilies
- eggs
- milk
- can of tomato sauce
Chili Relleno Casserole
Chili Rellenos made easy with chili relleno casserole.
Ingredients
- 1 pound ground beef
- 1 green pepper, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon ground oregano
- 1/4 teaspoon garlic powder
- 2 cups shredded cheddar cheese
- 2 cups shredded monterey jack cheese
- 2 cans (4 ounces each) chopped green chilies
- 4 eggs
- 3/4 cup milk
- 1- 8 ounce can tomato sauce
Instructions
- In a skillet brown ground beef. Add green pepper and cook until pepper is tender.
- Add green chilies, salt, and spices to the meat mixture and set aside.
- In a bowl combine eggs and milk.
- In a 9 x13 pan layer 1/2 of meat and about 1/2 cup cheddar cheese and 1/2 cup Monterey jack cheese.
- Add another layer of meat and another layer of cheese. Leave remaining cheese to use on top after baking.
- Pour egg-milk mixture over the top of the cheese.
- Bake at 350 for 30 minutes. Remove from oven and spread tomato sauce over top. Then sprinkle with remaining cheese. Bake for 7 more minutes.
- Remove from oven and let sit about 10 minutes before serving.
- Enjoy!

It served my family of 5 with enough left for lunch for my husbands the next day. So, I would say 5-6 serving, but I served it with only chips and avocados. You could easily stretch this by serving it with rice and some beans or mexican rice or something like that. For your family you might need to double it. 🙂

How much heat would you say this has ?

It is pretty mild. All three of my kids ate it and so did I and I am not much for super spicy. My husband actually added hot sauce or salsa to it to add some heat. The only heat comes from the green chilies so it is not much.

It is a little eggy, but not like a quiche. The egg and milk, give it some texture and help it hold together.

Do you think using enchilada sauce instead of tomato sauce would work well?

I think that would probably work fine, it would just give it a little different flavor. You might want to cut back on some of the other seasonings, but it should work. I would love to hear how it is if you try it.

The green chilies add some heat/spice so I would maybe cook a little finely chopped jalapeno with the meat. Or you could use whatever chili/pepper you like to it. I hope you enjoy it!
