Oats, chocolate, chocolate chips, M&M’s, and more make up these delicious Chocolate Cowboy Cookies.
I basically took a classic cowboy cookie recipe and made it better with more chocolate. Not only that I am sharing the regular version and the gluten free version of chocolate cowboy cookies.
Years ago, I saw a recipe online for chocolate cowboy cookies. I made a note about it, but did print out the recipe, so I did not know exactly how they were made.
Every time I would make cowboy cookies I thought about giving a chocolate version a try, but since I didn’t have a recipe I never did.
A few months ago I decided to finally test making some.
I started with my favorite cowboy cookie recipe which came from my best friend’s mom. She has made them for years and I have fond memories of eating them when I was a kid.
I knew that I would have better results adapting them if I started with a great recipe.
I set about to not only make them chocolate but to also make a gluten-free version.
I changed a couple of things about the recipe. I changed the shortening to butter. Mainly because I prefer using butter in most recipes.
I knew that I needed to add cocoa powder. If you just added cocoa powder you would have a dry cookie. Instead of just adding it, I decreased the flour and added the same amount of cocoa.
The result was perfect.
It was exactly what I was looking for. It was all the things about a cowboy cookie that I love, but with extra chocolate added.
One of the things that I love about cowboy cookies is how easy they are to change up. You can leave out the M&M’s and add a second type of chocolate chip.
If you want to make them festive use holiday M&Ms. These are also a great way to use up holiday M&Ms after a holiday.
No matter how you make them they are delicious cookies!
Ingredients
- sugar
- brown sugar
- butter
- eggs
- vanilla
- old fashioned oats or gluten free oats for gluten free version
- flour or Bob’s Red Mill Gluten Free 1 to 1 Blend
- salt
- soda
- baking powder
- chocolate chips
- M&M’s
- nuts (optional)
Chocolate Cowboy Cookies
A classic cowboy cookie made better with extra chocolate.
Ingredients
- 1 cup sugar
- 1 cup brown sugar
- 1 cup butter, softened
- 2 beaten eggs
- 2 teaspoon vanilla
- 2 cups old-fashioned oats - use gluten free oats for gluten free version
- 1 1/2 cups flour or use Bob's Red Mill Gluten Free 1 to 1 Blend for gluten free version
- 1/2 cup baking cocoa
- ½ teaspoon salt
- 1 teaspoon soda
- ½ teaspoon baking powder
- 2 cups chocolate chips
- 1 cup M&M's, if you are gluten free be sure you are using a flavor or variety that is gluten free
- ½ cup nuts (optional)
Instructions
- Preheat oven to 350 degrees.
- Cream sugar and butter.
- Add eggs and vanilla and mix until combined
- Combine flour, cocoa, salt, soda, and baking powder in another bowl.
- Add dry ingredients to butter sugar mixture and mix until well combined.
- Stir in oatmeal, chocolate chips, M&M's, and nuts, if using nuts.
- Drop onto an ungreased cookie sheet and bake at 350 for 10 minutes.
- Let cool on the cookie sheet for 2-3 minutes.
- Remove to a cooling rack to finish cooling.
Notes
I tested this recipe with Bob's Red Mill 1 to 1 Gluten Free flour blend. Other blends might work, but they have not been tested in the recipe.

Have you tried freezing this dough and baking from frozen?

No, but I have other cookie doughs and it works great, so I think it would work with this dough as well.
