Cinnamon Roll Muffin Cake is an example of that. I took my favorite Cinnamon Roll Muffin recipe and made it into a muffin cake. Not only did I make it into a muffin cake I tried it gluten free too.

The ingredients for this Cinnamon Roll Muffin Coffee Cake and the Gluten Free Cinnamon Roll Muffin Cake are pretty basic. You probably have everything on hand that you need to make it.
- all purpose flour or Bob’s Red Mill 1 to 1 Gluten Free Flour Blend
- baking powder
- salt
- sugar
- butter
- egg
- buttermilk or milk and lemon juice
- brown sugar
- cinnmon
- powdered sugar
- vanilla
Instructions
This cake is so easy to make. It has several steps because it has a topping and a frosting, but all the steps are quick and easy.
- Preheat oven to 375
- Grease an 8×8 or 9×9 pan.
- In a bowl combine flour, baking powder, salt, and white sugar.
- In another bowl combine butter, egg, and milk.
- Pour wet ingredients into dry ingredients. Stir. Set aside.
- In a small bowl combine brown sugar, cinnamon, and butter for topping.
- Fold half of cinnamon mixture into batter. Set the remaining mixture aside.
- Spread batter into prepared pan.
- Sprinkle topping mixture on top.
- Bake for 25-27 minutes or until toothpick inserted into the center comes out clean.
- While cake is cooking combine frosting ingredients.
- After cake has cooled slightly drizzle frosting over cake.
- Cut into squares and serve.

Ingredients
- 2 cups all purpose flour or Bob's Red Mill 1 to 1 Gluten Free Flour Blend
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/3 cup sugar
- 1/4 cup butter, melted
- 1 egg
- 1 1/4 cups buttermilk (or milk with 1 teaspoon lemon juice added)
Topping
- 1 cup brown sugar
- 2 teaspoons cinnamon
- 3 tablespoons butter, melted
Frosting
- 1/2 cup powdered sugar
- 2 teaspoons milk
- 1/2 teaspoon vanilla
Instructions
- Preheat oven to 375 degrees.
- Grease an 8x8 or 9x9 pan. Set aside.
- In a bowl combine flour, baking powder, salt, and sugar. Set aside.
- In another bowl combine butter, egg, and milk.
- Pour wet ingredients into flour mixture and stir just until combined.
- In small bowl combine topping mixture until it forms a crumbly mixture.
- Fold half of mixture into muffin batter. Set aside the remaining mixture.
- Scoop batter into prepared pan.
- Sprinkle the remaining topping on cake.
- Bake for 25-27 minutes or until a toothpick inserted in the center comes out clean.
- While cake is baking mix frosting ingredients until smooth.
- Remove from the oven and cool for a few minutes.
- Drizzle frosting over cake.
