I am turning my favorite quiche recipe into a Crustless Spinach Sausage Cottage Cheese Quiche.
I love quiche. It is easy to make gluten-free by skipping the crust and making it crustless, and it works for breakfast, lunch, or dinner.
For this crustless spinach cottage cheese quiche, I took my cottage cheese quiche, a recipe that I have been making for years, and added spinach and sausage.
It turned out delicious!

You can easily adjust this recipe with the cheese and meat you have on hand.
- eggs
- cottage cheese
- shredded cheddar
- shredded mozzarella cheese
- all-purpose flour, or for gluten-free version use a gluten-free flour blend
- butter
- baking powder
- frozen spinach
- ground breakfast sausage
Crustless Spinach Sausage Cottage Cheese Quiche
Sausage and spinach are combined in this delicious crustless quiche
Ingredients
- 6 eggs
- 1 cup cottage cheese
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese or cheddar cheese
- 1/4 cup all-purpose flour ( for gluten free version use a gluten free flour blend)
- 2 tablespoons butter, melted
- 1/2 teaspoon baking powder
- 1/2 lb. ground breakfast sausage, cooked and drained
- 2 cups frozen chopped spinach
Instructions
- In a large bowl beat together eggs, cheese, flour, butter, and baking powder until well combined.
- Stir in spinach and cooked sausage.
- Transfer to a greased 9-in. round baking dish, quiche pan, or 8x8 square pan. The pan will be full.
- Bake at 375° for 35-38 minutes or until a toothpick or knife inserted near the center comes out clean.
- Let cool for five minutes. Cut and serve.
Notes
This recipe is gluten free as long as you use a gluten free flour blend and read labels to make sure ingredients, like the sausage are gluten free.
