I shared this picture on Instagram recently and although it is not the best picture, I knew I should share it here too because it is one of my favorite summer side dishes.
Food can be simple, delicious, and healthy. It doesn’t not have to be Pinterest or magazine perfect to be good. Simple food, that only contains a few ingredients, can and should taste great.
One of the things I love about summer is all the garden fresh fruits and vegetables. They make simple summer cooking easy.
Last week I picked a few zucchini from our garden and decided to quickly fry them up for dinner. Often when you think of fried zucchini you think of zucchini dipped in a batter and then fried. This is not that kind of zucchini. That kind is good, but this is a much simpler fried zucchini.
This is simply zucchini, bacon grease, and salt. That is it.
This is not really a recipe. I sliced a couple of zucchini, cooked it in a little bacon grease, and sprinkled it with salt. My whole family loved it and it made a great side dish for dinner.
Cooking this in a cast iron skillet is not a must, but it does work best. And I am hesitant to say that the bacon grease is optional because it is bacon grease. It adds so much flavor to the zucchini. To get the best result and flavor use bacon grease. If you don’t have bacon grease a cooking oil will work too.
Easy Fried Zucchini
Fried Zucchini is easy to make and is a great side dish.
Ingredients
- 1-2 zucchini, sliced thin
- 1-2 tablespoons bacon grease
- 1/2 teaspoon salt
Instructions
- Melt bacon grease in a cast iron skillet.
- Add zucchini and salt.
- Cook until zucchini over medium high heat, stirring occasionally, until tender and lightly browned.

I adore fried squash! I always dredge mine in seasoned cornmeal before frying. Try it sometime with sliced okra and diced potatoes. Delicious!
