Is anyone else having trouble keeping track of what day it is right now? I was going to do this post for Everyday Adventures earlier this week and then realized that it wasn’t Friday… The days are kind of just running together right now.
The weather in Oklahoma the last few days has been so nice. It has actually been quite warm for this time of year. I am not complaining though. We could all use a little sunshine right now.
I even had my son get out our hammock. It makes the perfect spot for reading. And for getting a little peace and quiet outside.
Sometimes living in the country is hard. It can be an inconvenience. There is always so much to do and there isn’t a grocery store down the street.
However, right now I am very thankful for it. We have plenty of room for sitting outside, walks, working outside, and taking a break from each other. 🙂
Country, already very slow, internet right now is not so nice though. Slow internet has become very very slow, sometimes no internet at all, internet.
Three college kids now doing online classes the rest of the semester means that we have might have to create a schedule of who gets to use the internet when.
But once we get into a routine, I think it will be fine. Slow internet is definitely a small problem to have right now.
Are you avoiding the grocery store right now? I am. I am trying to make the food we have stretch so I can avoid going shopping as long as possible.
This week I made a pot of chili last for multiple meals. I took that last little bit and served it over pasta for Chili Cheese Pasta. It is a great way to make leftovers stretch.
I know many of you are doing the same thing with food right now. I have been sharing what I have been cooking and the tips I have for cooking with the ingredients you have on hand in my Facebook group.

One of the things that I have been making is my mom’s coconut bars. They are so good. I grew up eating them and she has been making them for at least forty years.
They only contain a few basic ingredients like butter, sugar, eggs, and coconut. If you love coconut you need to try them. They aren’t pretty, but they are so delicious!
I love cookbooks and have quite a few. I love all kinds of cookbooks, but I especially enjoy old cookbooks or cookbooks that contain old fashioned type recipes.
This week I pulled quite a few of them off the shelf and started looking through them for ideas. Many of these cookbooks are not still available, but the recipes in them are good recipes. We can learn a lot of the older generations when it comes to cooking.

I placed an order from Bob’s Red Mill two weeks ago when the stores in our area were first starting to sell out of stuff. I realized that I might have a hard time getting some of the gluten free flours and allergy friendly foods in my area and wanted to order some things
I was so excited when my order came this week. I couldn’t believe that it came so fast and that they had everything I ordered in stock.
A big thanks to Bob’s Red Mill, all the grocery store workers, medical workers, and all the other essential workers that are keeping everything going right now. We appreciate all your hard work and long hours!
