A friend of ours used to make a Mississippi Mud cake that my son loved. I had the recipe, but I have not made it in years.
This year for his birthday I decided it was time to make it again. I was determined to make it gluten free so that we could all enjoy it.
The gluten free version turned out so good! This is a dessert that you cannot tell is gluten free. My son loved it and was so glad that I made it again.
There are all kinds of recipes for Mississippi mud cake. My friend’s version is my favorite.
It is a rich and delicious brownie-like cake.
You add a layer of marshmallows.
And then pour on a fudgy frosting.
The result is a rich and delicious cake that everyone will love.
Ingredients
- sugar
- oil
- eggs
- Bob’s Red Mill Gluten Free Flour Blend
- baking powder
- salt
- baking cocoa
- vanilla
- chopped pecans
- miniature marshmallows
- butter
- powdered sugar
- evaporated milk
Gluten Free Mississippi Mud Cake
A classic southern cake recipe made gluten free.
Ingredients
Cake
- 2 cups sugar
- 1 cup oil
- 4 eggs
- 1 1/2 cups Bob's Red Mill 1 to 1 Gluten Free Flour Blend
- 2 1/4 teaspoons baking powder
- 1/3 teaspoon salt
- 1/3 cup baking cocoa
- 2 teaspoons vanilla
- 1 cup chopped pecans
- 2 cups (or so) miniature marshmallows
Frosting
- 1 cup butter, softened
- 3 cups powdered sugar
- 3 tablespoons baking cocoa
- 1/2 cup evaporated milk
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
Instructions
- Preheat oven to 325.
- Grease a 9x13 pan. Set aside.
- In a bowl combine gluten free flour, baking powder, salt, and cocoa. Set aside.
- In a mixing bowl cream together sugar and oil.
- Add eggs and mix until combined.
- Slowly add flour mixture and mix just until well combined.
- Pour into greased 9x13 pan.
- Baked for 35-38 minutes.
- Remove from oven and sprinkle marshmallows on top. You want them in a single layer over the entire cake.
- Put back in oven for about 5 minutes or until marshmallows are soft and are fluffy.
Frosting
- In a mixing bowl meat butter, milk and vanilla.
- Combined powdered sugar and baking cocoa and slowly add to butter mixture until well combined.
- Stir in nuts.
- Pour over top of marshmallows on warm cake.
Notes
This recipe was tested with Bob's Red Mill 1 to 1 Gluten Free Flour Blend. Other gluten free blends may work, but they have not been tested.
