An oatmeal crust and topping are combined with a fudge filling in these delicious gluten free oatmeal fudge bars.
This cookie bar recipe is so good that no one will know that it is gluten free. It is a great dessert to serve when you need a dessert for both gluten free eaters and non gluten free eaters.
Seriously, you can serve these to people who do not eat gluten free and they will love them.
I adapted this from a Taste of Home recipe that I made for years before I was gluten free.
The original recipe was not gluten free, but back in 2013 I adjusted the recipe to make it gluten free.
The best way to describe these are like an oatmeal cookie with a layer of fudge in the middle. So good!
There is a crust made with gluten free oats and gluten free flours.
Then there is a fudge layer that pairs perfectly with the oatmeal crust.
There is another layer of crust that you crumble on top.
The end result is a delicious gluten free oatmeal fudge bar.
Ingredients
The recipe calls for white rice flour, but brown rice flour will work too. See note in the recipe for using a gluten free flour blend in place of gluten free flours.
- butter
- brown sugar
- eggs
- white rice flour ( brown rice flour will work too )
- potato starch
- tapioca flour
- xanthan gum
- baking soda
- salt
- gluten free rolled oats
- gluten free semi sweet chocolate chips
- sweetened condensed milk
Gluten Free Oatmeal Fudge Bars
Oatmeal and chocolate are combined into these delicious gluten free oatmeal fudge bars.
Ingredients
- 1 cup butter, softened
- 2 cups brown sugar
- 2 eggs
- 1 3/4 cup white rice flour
- 1/2 cup potato starch
- 1/4 cup tapioca flour
- 1/4 teaspoon xanthan gum
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3 cups gluten free rolled oats
Chocolate Filling
- 2 cups gluten free semi sweet chocolate chips
- 1- can sweetened condensed milk
- 1 tablespoon butter
Instructions
- In a bowl combine butter and brown sugar. Mix for 2 minutes.
- Add eggs and beat well.
- In a bowl combine rice flours, potato starch, tapioca starch, xanthan gum, baking soda, salt, and oats. Slowly add to creamed mixture until well combined. Set aside.
- In a pan combine chocolate chips, milk, and butter. Heat over low until chocolate is melted. Set aside.
- Press 2/3 of the oatmeal dough mixture into a 9x13 pan. Spread chocolate filling over dough.
- Carefully sprinkle/drop the remaining dough onto the chocolate filling. Press dough slightly into filling.
- Bake at 350 degrees for 25 minutes.
- Let cool before cutting.
Notes
2 1/2 cups of Bob's Red Mill 1 to 1 Gluten Free Flour Blend can be used in place of the gluten free flours and xanthan gum. I like the individual flours, but Bob's Red Mill 1 to 1 blend will work as well.
