During the summer and warmer months, I often want something a little lighter for dinner. You won’t find many soups or casseroles on my menu plan right now. I am much more likely to grill something or make a salad.
I love salad for dinner. It is a quick, easy, and healthy meal. However, my husband does not really like just salad for dinner. In order to make us both happy, I like to serve salads that contain quite a bit of meat. Or at least where my husband’s salad can contain quite a bit of meat.
This buttermilk grilled chicken salad works perfectly for that. We both enjoy this salad, and it makes for a perfect summertime meal.
Grilled Buttermilk Chicken Salad
Buttermilk makes this grilled chicken moist and delicious. Perfect for serving on salad for a main dish salad.
Ingredients
- 1 cup buttermilk
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1 teaspoon salt
- ½ teaspoon thyme
- ½ teaspoon dried sage
- ½ teaspoon ground black pepper
- 4 boneless skinless chicken breast, or other cuts of chicken
- lettuce, vegetables, etc for salad
Instructions
- Whisk together marinade ingredients.
- Add chicken and let marinade for 4-8 hours, turning chicken occasionally. I like to let this marinade for about 8 hours, but less time will work.
- Remove chicken from marinade and grill chicken until done.
- Serve over lettuce and other desired vegetables

I love salads for dinner, especially if I eat a huge lunch. I actually prefer to eat a huge lunch and a light dinner, but it doesn’t always work out that way.

@flora, We eat this with a homemade ranch or Caesar dressing. I think both of those blend well with the taste of the chicken.

Do you use extra, non-chicken contaminated marinade for the dressing?

@FishMama, I have not done that, but that would work really well. My kids like it with a homemade ranch type dressing.

Whenever we go to Applebees, I usually get 1/2 of the chicken caesar salad. About a year ago, I was diligently counting WW points and discovered that this specific salad (whole, not half) was MORE points than the 9 oz. sirloin steak. 😮 I said “WHAT!?” There were a lot of surprises while I was counting those WW points. LOL
Now I’m just more active and I watch my portions, as well as carbs and sugars.
I don’t like milk per se; however, I’d like to try this recipe sometime. 🙂
