This is a quick and easy version of a classic beef stew.
Classic beef stew usually contains either stew meat, roast, or something like ox tail. This recipe, though, changes stew up and uses ground beef.
I love to make a stew with ground beef because it takes a recipe that usually takes a while to cook and turns it into a meal for any day of the week.
Ingredients
A few simple ingredients are all you need to make this quick and easy stew recipe.
- ground beef
- onion
- beef broth, if you eat gluten free be sure that your broth is gluten free
- water
- canned diced tomatoes
- potatoes
- carrots
- bell pepper
- garlic
- ground cumin
- salt
- chili powder
- dried basil
- frozen corn
Ground Beef Stew
A quick and easy version of a classic stew.
Ingredients
- 2 pounds ground beef
- 1 onion, diced
- 1 can beef broth, if you are gluten free be sure that your beef broth is gluten free
- 2 cups water
- 2- 14 ounce cans diced tomatoes
- 2 potatoes, peeled and cut into chunks
- 4 carrots, peeled and cut into pieces
- 1 green, red, or yellow bell pepper, diced
- 2 cloves garlic minced
- 2 teaspoons ground cumin
- 1 teaspoon salt
- 2 teaspoons chili powder
- 1 teaspoon dried basil
- 1 cup frozen corn
Instructions
- In a large pan, cook ground beef, onion, and peppers until meat is cooked and vegetables are tender. Drain off any fat.
- Add garlic to meat mixture and cook 1 minute.
- Add beef broth and water to the meat mixture and bring to a boil.
- Add potatoes, carrots, cumin, salt, chili powder, and basil. Stir and reduce heat to low.
- Cook for twenty minutes or until the potatoes and carrots are tender. Stir occasionally while cooking.
- Add frozen corn for the last five or so minutes of cooking.
- Remove from heat and serve.
Notes
You can change up the seasonings in this stew for a different flavor.
