What can make almost any cookie even better?
Marshmallow creme filling.
You know the kind of filling that the store bought oatmeal creme pies have in them or like the filling used to make homemade whoopie pies.
It is not quite frosting, and not just marshmallow. It is a perfect combination of both.
I recently used this marshmallow creme filling for my homemade sandwich cookies and my gluten free sandwich cookies. They were so good and very easy to make.
I think this filling would be good with my oatmeal cookie. Just leave out the chocolate chips and fill them with this and your family will love them. Really this filling would work well with just about any type of cookie.
When making sandwich cookies like this it is often hard to get the exact same size. I used my cookie scoops for these and each cookie came out almost exactly the same.
We did think this filling was best the next day. It was good the first day, but had a little better texture the second day. So, I would suggest making these and serving them a few hours later or even the next day. That is if you can keep your family away from them.
Marshmallow Creme Filling
Marshmallow creme frosting takes any cookies, cake, or cupcake and makes it better.
Ingredients
- 2 cups powdered sugar
- 1/2 cup butter, softened
- 1- 7 ounce jar marshmallow creme
Instructions
- Mix together well using an electric mixer. ( You could do this without a mixer, but it might take a bit of muscle).
- Mix for about 3 minutes or until smooth and light and fluffy.
- Frost cookies.

I want to make these for my daughters to sell at our yard sale. I was wondering if they need to be refrigerated.
