I am continuing my Martha Stewart Cooking Challenge with Martha Stewart’s Peach Buckle recipe.
I started my Martha Stewart Cooking Challenge back in 2021 as a way to start cooking from all of my Martha Stewart cookbooks and magazines.
It has been a fun way to try new recipes. I have also enjoyed sharing what works and hasn’t worked about the recipes with you.
Today’s recipe for Martha Stewart’s Peach Buckle worked perfectly. We loved it.
It even works gluten-free, and I am sharing both versions, so if you eat gluten-free, you can easily adapt it.
Martha Stewart calls this a peach buckle, but to me it is a peach cobbler. I almost titled it Martha Stewart’s Peach Cobbler, but since she calls it a buckle, I stuck with the original title of the recipe.
I think this is considered a buckle because the top is more cake like. That is actually why my son loved this recipe. He loved the fact that it had a nice crispy yet cake like topping.
When I make recipes for this challenge, I often change a few things. For this recipe, I did not change anything except to try it gluten-free.
All I did to make it gluten-free was to use Bob’s Red Mill 1 to 1 gluten-free blend.
So, this Martha’s Peach Buckle recipe works both with regular all purpose flour and with Bob’s Red Mill 1 to 1 gluten free flour blend.
Ingredients
- butter
- ripe fresh peaches
- sugar
- all purpose flour or Bob’s Red Mill 1 to 1 Gluten Free Flour Blend for gf version
- baking powder
- salt
- milk, the original recipe called for whole milk, I used 2% milk because that is what I had and it worked great
- vanilla extract
- whipped cream or ice cream for serving
Martha Stewart's Peach Buckle Recipe
A classic peach buckle recipe perfect for summer.
Ingredients
- 1/2 cup butter
- 3 or 4 ripe peaches, peeled and sliced
- 1 cup plus 2 tablespoons sugar
- 1 cup flour or Bob's Red Mill 1 to 1 gluten free flour blend
- 2 teaspoons baking powder
- pinch of salt
- 1 cup milk, whole or 2 %
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350 degrees.
- Melt butter in a 10 inch cast iron or similar pan. Set aside.
- In a bowl, combine peaches and 2 tablespoons of sugar.
- In another bowl, whisk together flour, baking powder, and salt.
- Add the remaining sugar, milk, and vanilla to the flour mixture.
- Whisk in melted butter.
- Pour batter into cast iron pan.
- Place peaches on top.
- Bake for 50 to 55 minutes.
- Serve warm or at room temperature with whipping cream or ice cream.
Notes
The gluten free version of this recipe was tested with Bob's Red Mill 1 to 1 Gluten Free Blend. Other gluten free blends may work, but they have not been tested.
