This recipe for Mexican Cabbage Bowl is inspired by the egg roll in a bowl recipe that I have been making for years.
Egg roll in a bowl is the recipe that helped me learn to love cooked cabbage. Before that, I wasn’t really a fan of cooked cabbage.
I make egg roll in a bowl at least once a month. We love it, but family is getting tired of it.
One of the things that I love about egg roll in a bowl is that it is a one pot quick and easy dinner. That is why we eat it so often.
I decided to take the same idea of egg roll in a bowl, but instead of Asian flavors, I changed it up to Mexican flavors.
The result was a quick and easy dinner that we loved! I called it Mexican cabbage bowl, but it could also be called Mexican cabbage skillet or just Mexican cabbage.
I am sure that this is not at all authentic Mexican food, but it has a Mexican or Tex-Mex flavor, so Mexican in the title seemed to fit best.
No matter what you call it, it is a delicious quick, and easy dinner.
Is Mexican Cabbage Gluten Free?
Yes, this Mexican cabbage bowl is gluten free! As long as you read labels on the taco seasoning etc., to make sure the ingredients are gluten free this is a quick and easy gluten free dinner.
Ingredients
All you need for this Mexican Cabbage Bowl are a few basic ingredients.
- shredded cabbage
- ground beef, turkey, or chicken
- taco seasoning
- 14.5 ounce can diced tomatoes
- shredded cheddar or Mexican blend cheese
Mexican Cabbage Bowl
Ground beef, cabbage, tomatoes, and Mexican seasoning combine in a delicious quick and easy dinner.
Ingredients
- 12 ounces ( or about that )shredded cabbage
- 1 pound lean ground beef
- 1 package of taco seasoning ( if gluten free be sure to use gluten free seasoning )
- 14.5 ounce can diced tomatoes
- 1/2 cup shredded cheddar or Mexican blend cheese
Instructions
- In a skillet brown ground beef until no longer pink. Drain off all about a tablespoon or two of grease.
- Add shredded cabbage, taco seasoning, and tomatoes to the pan.
- Cook over medium heat, stirring often, until cabbage is softened.
- Stir in cheese.
- Serve with salsa, sour cream, etc. if desired.

If you are gluten free be sure to read labels to make sure that your ingredients like taco seasoning are gluten free.
