I love my rice cooker. It is becoming one of the most used small appliances in my kitchen. I use it for cooking plain rice, but I also use it for things like my rice cooker macaroni and cheese.
I love the convenience of my rice cooker, especially for recipes like this one. I can place everything in the rice cooker, push the button, and have a healthy and filling meal in no time.
I serve this for lunch or dinner. I usually serve it with chips and a salad for a simple, but really good meal my whole family enjoys.
This is one of those meals that can easily be made start to finish in 25 minutes or less. I love those kinds of meals.
Mexican Rice in the Rice Cooker
Mexican Rice made easy in the rice cooker.
Ingredients
- 1 cup uncooked long-grain rice
- 1 12-ounce jar salsa, mild, medium, or hot
- 1 tablespoon vegetable oil
- 1 cup frozen corn
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1 can of black or pinto beans, rinsed and drained (I use dried beans that have been cooked and frozen)
- 1 1/4 cups water
Instructions
- Add all ingredients to the inner pot of rice cooker.
- Stir, close the lid and press the White Rice or cook button, depending on your rice cooker.
- When rice cooker switches to Keep-Warm mode, open the cooker, quickly stir and re-cover.
- Allow to stand for 8-10 minutes before serving.
- Spoon onto a serving dish and serve with cheese and sour cream.

you know, us people who live in Hawaii would die without their rice cookers. I like how you made Mexican rice out of yours one. I will have to try it. Normally, our rice cooker is used just for making rice. Rice is eaten pretty much every day here. I wonder if my other half will like this type of rice. Thanks for sharing!!

@Lynn, I am a huge Mexican Rice fan, so when I saw this I jumped at the chance to make it, my rice cooker is a cheap one, and had for many years, I am thinking I need to get a bigger one to make this and maybe add more water, just seemed so dry to us. But thanks for your recipes, you give me inspiration to cook all my meals!

I made this and it turned out great. I used a can of diced tomatoes and green chilies instead of salsa; I also added some chili powder (though next time I would put less, as it turned out a bit spicier than I like). We put the rice in burritos, and it was delicious.

Sadly when I tried this recipe the rice did not cook properly. As it was under cooked and the rice grains where crunchy .I did try adding more water and cooking it longer. But even that did not help. I used Jasmine rice as the long grain rice for this recipe could that have been the problem?

I am so sorry that it didn’t work for you. Jasmine rice does cook a little differently. O have never used Jasmine rice in it. Rice cookers can also vary.
