Did you know that you can make cobbler in the microwave?
I don’t know where I first saw the idea to make cobbler in the microwave, but I have been making cobblers that way for years. It is one of my favorite ways to enjoy cobbler during the summer.
I still enjoy a good old fashioned cobbler made in the oven, but microwave cobblers are perfect for the crazy hot summer weather we have in Oklahoma.
My husband recently dropped something off at a friend’s house and he came home with a big bag of fresh from the garden blackberries.
I instantly knew that I was going to make a cobbler. About fifteen minutes later we were eating hot blackberry cobbler with vanilla ice cream.
Nothing says summer quite like eating blackberry cobbler and ice cream at 9:30 at night.
Can I make blackberry cobbler gluten free?
Most cobbler recipes can be made gluten free if you use gluten free ingredients.
For this microwave blackberry cobbler, it works great gluten free. I use gluten free oats and either Bob’s Red Mill 1 to 1 gluten free blend or King Arthur’s Gluten Free Blend.
Ingredients
You only need a few basic ingredients to make this microwave blackberry cobbler.
- blackberries
- sugar
- cornstarch
- brown sugar
- quick oats or use gluten free quick oats for gluten free version
- flour or use a gluten free flour for gluten free version
- butter
Instructions
- Place blackberries in a bowl. Add 1/2 regular sugar and cornstarch. Stir just until blackberries are coated with sugar and cornstarch.
- Place blackberries in a 9 or 10 inch deep dish pie plate, 9×9 pan, or quiche pan that is microwave safe.
- In a bowl combine brown sugar, oats, and flour. Cut in butter using a fork or pastry blender until in butter is pea sized and the mixture is crumbly.
- Sprinkle over blackberries.
- Microwave on high for 10 minutes or until blueberries are soft and cooked.
- Serve warm with ice cream or whipped cream.
