These oatmeal cookies have been a favorite for over thirty years. I first shared this recipe in March of 2008. That was the month after I started this site. This cookie recipe is still a favorite, so I knew that it was time to update the post and pictures.
I took these oatmeal cookies to a church dinner on Sunday and they were gone in no time.
This recipe is easy to make gluten free by using gluten free oats and Bob’s Red Mill Gluten Free 1 to 1 flour. In fact, it was the gluten free version that I took to the church dinner. No one knew they were gluten free.
They are a simple and delicious oatmeal cookie recipe.
We love to make these with a mix of M&M’s and chocolate chips, but you can easily make them with just M&M’s, just chocolate chips, or even a mix of chocolate chips and raisins.
Oatmeal Cookies
A simple classic oatmeal cookie.
Ingredients
- 1 cup butter, softened
- 1 cup white sugar
- 1 cup packed brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour or Bob's Red Mill 1 to 1 Gluten Free Blend for gf version
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 cups quick cooking oats or gluten free oats for gluten free version
- 2 cups M&M's or chocolate chips or a mix of both
Instructions
- In a medium bowl, cream together butter, white sugar, and brown sugar.
- Beat in eggs one at a time, then stir in vanilla. Combine flour, baking soda, and salt. Stir into the creamed mixture.
- Mix in oats. Cover, and chill the dough for at least one hour.
- Preheat the oven to 375 degrees F. Grease cookie sheets.
- Using a cookie scoop or spoon take about two tablespoons of dough and drop 2 inches apart on cookie sheets.
- Bake for 8 to 10 minutes in preheated oven.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely

No, I have never frozen the dough on this recipe. I have on others though and have had good results. The original recipe came from allrecipes.com. The have it as just oatmeal cookies. I decided it would be good with the extras like Choc. chips or M&M’s. I make it now with the extras and haven’t used just the basic in a while.. But you could look at the comments on it at allrecipes and see if anyone else has frozen it. It is called listed as Soft Oatmeal Cookies.
