Peach, banana, and berries combined together with coconut milk make for a delicious smoothie.
Smoothies are one of my favorite treats during the summer. They are full of fruit, easy to make, and can easily be changed up with what fruit is in season. They also work perfectly for breakfast, lunch, or snack.
The other day I was getting ready to head out the door and realized that I had not eaten breakfast and I was not sure when I would have time for lunch. I had some fresh peaches on the counter, along with a couple of bananas. I also knew I had some berries in the freezer and could easily combine them into a smoothie for something quick before I left.
It ended up being delicious and healthy and just what I needed.
An added bonus was that it was gluten-free. I love the fact that smoothies are almost always gluten-free. I am always looking for quick and easy foods that are gluten-free.
For the liquid in this smoothie I used coconut milk. I have been loving coconut milk in my smoothies because it pairs so well with fruit.
The recipe below is pretty basic and the amounts can easily be changed. When I am making this for a meal I like a large smoothie, so this makes one really large smoothie or two smaller ones.
