Peas and bacon are a simple and delicious combination, perfect for just about any meal.

I had initially planned to share this recipe for my Cooking with Ina series, but I changed the recipe so much that it wasn’t really Ina’s recipe any more.
Ina’s recipe for Peas and Pancetta is from her Make It Ahead cookbook. I wanted to try the recipe, but I did not have all the ingredients I needed.
I did not have pancetta, but I did have bacon. The recipe also called for shallots, which I do not keep on hand, so I used onions instead.
I also left out the mint. I am sure the mint would be good with peas, but as with the two ingredients above, I did not have any mint.
I did follow Ina’s basic instructions, but since I changed three of the main ingredients, it really isn’t her recipe anymore.
Maybe I should say it is an Ina inspired recipe for peas and bacon.

- frozen peas
- salt

Peas with Bacon
A quick and easy side dish for just about any meal.
Ingredients
- 4 slices of bacon. cut into pieces
- 1/2 onion, diced
- 10 ounces frozen peas
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
Instructions
- Cook bacon and onion in a pan over medium to medium-low heat until bacon is cooked and onion is tender, 5-6 minutes.
- Drain all but one tablespoon of grease off of bacon and onion mixture.
- Add peas, salt, and pepper.
- Cook over low heat, stirring occasionally, until peas are cooked through.
Notes
This recipe is gluten free as long as you read labels to make sure the ingredients are gluten free.
