My family has always loved sloppy joes. Not the kind that comes in a can, but the homemade kind.
Homemade sloppy joes are so easy to make and they are so much better than the ones that come in a can.
I have all kinds of different sloppy joe recipes. I have a basic sloppy joes recipe, a taco sloppy joes recipe, an Italian sloppy joes recipe, a cheeseburger sloppy joes recipe, and even a slow cooker sloppy joes recipe.
Today’s recipe though is a little bit different. It is for Queso Sloppy Joes. It combines the flavors of queso and ground beef into a delicious, quick and easy dinner.
I came up with this recipe recently and I think it may be my son’s new favorite sloppy joe that I make.
Make Ahead and Freezer Friendly
Sloppy Joes are a great make ahead dinner. You can make a double batch and eat it for multiple days. You can also make it on the weekend and reheat it for dinner during the week.
The meat filling also freezes great. It is one of my favorite freezer meals. Cook the meat filling, let it cool, and freeze it.
When ready to use defrost it, reheat it, and serve it over buns or bread.
Make Gluten Free Sloppy Joes
Most sloppy joes recipes, including this queso sloppy joes recipe, can be made gluten free. You just need to read the labels to make sure that the ingredients are gluten-free and serve them over gluten free buns or bread.
Ingredients
- ground beef
- chili powder
- cumin
- salt
- pepper
- tomato sauce
- canned diced tomatoes with green chilies, Rotel or something similar
- onion
- cheese
- sour cream
- buns or bread for serving
Queso Sloppy Joes
Skip the can and make your sloppy joes at home with these easy to make queso sloppy joes.
Ingredients
- 2 pounds ground beef
- 1 onion, chopped
- 1/2 teaspoon chili powder, more if you like it spicier
- 1/2 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 - 8 ounce can tomato sauce
- 1 can Rotel tomatoes or can of diced tomatoes with green chilies
- 1 1/2 cups shredded cheddar cheese or colby jack cheese
- 1/4 cup sour cream
- buns or bread for serving
Instructions
- In a skillet cook beef and onion until beef is browned and no longer pink and onion is tender.
- Drain off any fat.
- Add chili powder, cumin, salt, and pepper.
- Cook and stir for 1 minute.
- Add tomato sauce and Rotel tomatoes.
- Cook on low for 8 - 10 minutes.
- Add cheese and stir until melted.
- Remove from heat and store in sour cream.
- Serve on buns, bread, or gluten free bread or buns.
