Ingredients
There is a secret ingredient that makes these the best gluten free pumpkin muffins. It is a box of pudding mix. Not all pudding mixes will be gluten free, so be sure to read the ingredients and make sure that your ingredients are gluten free.

- Bob’s Red Mill 1 to 1 Gluten Free Blend
- sugar
- cook-and-serve vanilla pudding mix, not instant you have to use the cook and serve
- baking soda
- ground cinnamon
- salt
The Best Gluten Free Pumpkin Muffins
These gluten free pumpkin muffins are so good that no one will know that they are gluten free.
Ingredients
- 5 eggs
- 1-1/4 cups vegetable oil
- 1 can (15 ounces) solid-pack pumpkin
- 2 cups Bob's Red Mill 1 to 1 Gluten Free Blend
- 2 cups sugar
- 2 packages (3 ounces each) cook-and-serve vanilla pudding mix, not instant you have to use the cook and serve
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
Instructions
- Grease or line 24 muffin cups.
- In a large mixing bowl, beat the eggs.
- Add oil and pumpkin and mix until well combined.
- In another bowl combine the remaining ingredients, including dry pudding mix, and gradually beat into a pumpkin mixture.
- Divide batter evenly between muffin cups.
- Bake at 350 for 20-22 minutes or until a toothpick inserted near the center comes out clean.
- Cool for 5 minutes then remove from pans to wire racks to cool completely.

This recipe was tested with Bob's Red Mill 1 to 1 Gluten Free Flour Blend.
Not all gluten free boxed jello is gluten free, so be sure to read labels to make sure that your pudding mix is gluten free.
