These pumpkin muffins are more of a dessert than a breakfast muffin, which makes them perfect for this time of year.

- eggs
- oil
- can pumpkin
- flour or see note in recipe for gluten free version
- sugar
- cook-and-serve vanilla pudding mix, not instant; you have to use the cook and serve
- baking soda
- ground cinnamon
- salt
The Best Pumpkin Muffins
These pumpkin muffins are perfect for the fall and holidays.
Ingredients
- 5 eggs
- 1-1/4 cups vegetable oil
- 1 can (15 ounces) solid-pack pumpkin
- 2 cups all-purpose flour ( Bob's Red Mill 1 to 1 gf blends works well for a gf version)
- 2 cups sugar
- 2 packages (3 ounces each) cook-and-serve vanilla pudding mix, not instant you have to use the cook and serve
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
Instructions
- Grease or line 24 muffin cups.
- In a large mixing bowl, beat the eggs.
- Add oil and pumpkin and mix until well combined.
- In another bowl combine the remaining ingredients, including dry pudding mix, and gradually beat into a pumpkin mixture.
- Divide batter evenly between muffin cups.
- Bake at 350 for 20-22 minutes or until a toothpick inserted near the center comes out clean.
- Cool for 5 minutes, then remove from pans to wire racks to cool completely.
Notes
You have to use cook and serve pudding for this recipe, not instant pudding. You also do not mix the pudding up. You add the dry mix to the batter.
