This recipe is a classic mac and cheese recipe that everyone will love.
I grew up about an hour from Tillamook, Oregon, where Tillamook Cheese was founded. I love Tillamook products. Their cheese, ice cream, and yogurt are the best.
I have been to Tillamook many times and visited the Tillamook Cheese factory, but until a few weeks ago, I did not own a Tillamook Cheese cookbook.
I went to a library book sale in our area and found a Tillamook Cheese cookbook published in 2009 to celebrate the 100th anniversary of Tillamook Cheese.
I live in Oklahoma, a long way from Tillamook, Oregon, so I was surprised to find this cookbook at the sale.
The cookbook was only one dollar, so I knew I needed to buy it.
As I looked through that cookbook after I bought it, I knew that the first recipe I was going to try was the classic macaroni and cheese recipe.
The recipe called for basic ingredients that I had on hand.
The most important ingredient in the recipe is, of course, Tillamook Cheese.
The recipe calls for Tillamook Cheddar Cheese. I did not have enough cheddar cheese, but I had plenty of Tillamook Colby Jack cheese. So I ended up mixing the two kinds of cheese.
The results were delicious!
I think the colby jack cheese added some creaminess to the recipe that you don’t get with just cheddar cheese.
This recipe for mac and cheese is started on the stove and then finished in the oven. That combination of cooking gives it great texture.
If you have never made homemade macaroni and cheese, you need to. Skip the box and make it homemade.
Make It Gluten Free
This recipe for Tillamook Cheese Macaroni and Cheese was also easy to make gluten free. I used Bob’s Red Mill 1 to 1 gluten free flour blend and gluten free pasta.
It is a delicious homemade macaroni and cheese recipe.
Ingredients
- elbow macaroni or gluten-free elbow macaroni
- butter, use Tillamook butter if you can get it
- all-purpose flour or a gluten-free flour blend
- milk
- salt
- pepper
- Tillamook cheddar cheese or Tillamook Colby Jack Cheese
Tillamook Cheese Macaroni and Cheese Recipe
A classic, easy to make, homemade mac and cheese recipe, made better with Tillamook Cheese
Ingredients
- 8 ounces elbow macaroni or gluten free elbow macaroni noodles
- 1 tablespoons butter
- 2 tablespoons all purpose flour or Bob's Red Mill 1 to 1 gluten free flour blend
- 2 cups milk
- 1/2 teaspoon salt
- 1/8 teaspoon ground black pepper
- 2 1/2 cups shredded Tillamook cheddar cheese or Colby Jack cheese
Instructions
- Preheat oven to 375 degrees.
- Cook macaroni according to package directions. Drain and set aside.
- While macaroni is cooking, melt butter in a medium saucepan.
- Whisk in flour. Whisk constantly until the mixture is smooth. This takes 2-3 minutes.
- Gradually stir in milk, whisking constantly. Bring just to a boil, then reduce heat to a simmer.
- Whisk until the sauce has started to thicken. This will take 3-5 minutes.
- Remove from heat.
- Add salt, pepper, and 2 cups of cheese.
- Stir until the cheese is melted.
- Stir in cooked macaroni until mixed well.
- Pour into a greased oven-safe pan. Sprinkle with the remaining cheese.
- Bake for 15 - 20 minutes or until cheese on top is melted and slightly brown,
- Serve and enjoy.
Notes
If you double the recipe it fits well in a 9x13 pan.
This recipe can be made with all Tillamook cheddar cheese or all Tillamook Colby Jack cheese or a combination of both.
To make gluten free use gluten free macaroni and a gluten free flour blend in place of the flour.
