Well it could be sorghum because I have seen it really dark to a light brown like this. I was also going to say dulce de leche but not sure because I have never actually seen it except on top of the Jello pudding cups – Dulce De Leche Flavor. I have never heard of cajeta and have never cooked with any of the other. It isn’t the right consistency or color for honey butter as in butter melted with honey but it does look like honey with wax melted into it. So I am going to play my “I have no idea and I can’t wait to find out” card! I enjoy your What is it Wednesdays as well as the rest but Wednesday is my favorite day!

As much as your family likes to try Mexican foods, I am guessing dulce de leche. I’ve seen recipes for making it from simmering a can of sweetened condensed milk (even crockpot for ease). Has anyone tried this?
Someone else mentioned sorghum, and I know it’s not that since I use that in my own baking here and there.
I doubt this family would be trying miso, since traditional preparations involve fermentation of several gluten-containing grains.

I’m going with dulce de leche.
Dineen, I have made it with condensed milk in boiling water, haven’t tried the crock pot but will next time. In the pan with water, the longer you simmer it the thicker it gets, at about 2 1/2 hours it is perfect for spreading and too thick for pouring.
