It is time for another What’s For Dinner.
These What’s For Dinner posts are so fun because they are real-life, unedited pictures of what we have been eating.
After several years of sickness, I am finally seeing some improvement in my health. After working with several doctors and other health professionals, I feel more like myself than I have in probably four years.
That means I am finally back to cooking more and experimenting with recipes. I have been cooking and sharing recipes the last few years, but my creativity has been lacking.
I am excited that it is finally coming back and I am having fun trying all kinds of new recipes and ingredients. I can’t wait to share more over the next few months.
Now for what we have been eating!
Over the last six months I have made some changes in my diet. One of those changes is eating gluten free sourdough.
I am very familiar with sourdough. Long before I had a blog, so pre 2008, I made sourdough all the time.
Not only did I make sourdough, but I ground my own wheat, too.
Then, in 2009, I went gluten-free. Since that time, I have developed a gluten-free bread recipe, a gluten-free roll recipe, and a gluten-free pizza crust recipe that we love.
Two or so years ago, I decided to try gluten-free sourdough. Shortly after that, my health got significantly worse, and I did not have the time or energy to experiment with it.
Since I am feeling better, I decided it was time to give it a try again.
I am having so much fun experimenting with gluten-free sourdough recipes, including the gluten-free sourdough pizza crust in the picture above.

That is not the best picture, but I have almost perfected my gluten-free sourdough focaccia recipe. I need to make it a few more times before I share it.
It makes the best sandwiches!
The focaccia also makes excellent “pizza” in the air fryer.
When my kids were younger, I made pancakes almost every Saturday. My kids are now grown, and I miss those Saturday morning breakfasts.
I also miss making pancakes, so one night last month, I decided it was a pancake-for-dinner type of day.
If you are looking for a pancake recipe to try, I love Martha Stewart’s pancakes. I have adapted it to make gluten-free pancakes as well.
My version of Greek scrambled eggs is a summer favorite. If I have spinach, I love to add it to the recipe.
It is a quick, easy, delicious breakfast, lunch, or dinner.
We spent a long weekend in Missouri earlier this summer. We found some gluten-free doughnuts. They were baked doughnuts, but they were still delicious.
We also spent the week of the 4th of July in Oregon, visiting my family. We spent a few days with family and the rest of the time on the Oregon Coast.
The Oregon Coast in July is amazing. I have lived in Oklahoma for thirty years and still miss the beach, mountains, and the forest.
While in Oregon, we ate a lot of seafood, salmon, and fresh berries, but I did not take pictures of them.
However, I did take a picture of my strawberry shake from Burgerville. Burgerville’s seasonal fruit milkshakes are so good!
I also found a new favorite yogurt in Oregon. I got this yogurt from a coffee shop at the Portland airport the day we flew in and loved it.
I then bought several more at Fred Meyers. It is a West Coast company, and I had never seen it before.
According to the Ellenos website, Whole Foods sells this brand. I really hope I can find it here in Oklahoma.
I also had these delicious pecans! We don’t have Kroger or a Kroger affiliate in my area, or I would be buying more of these.
We also found the best gluten-free doughnuts that we have had at Blue Moon Bakery in Hillsboro, Oregon.
My daughter found this gluten-free bakery when she was looking for places to eat, and I am so glad she did. We will visit it again next time we are in Oregon.
When I got back from Oregon it was peach season in Oklahoma! That means fresh from the orchard peaches.
It also means that I have been making Martha Stewart’s Peach Buckle and homemade peach milkshakes.
