It is time for another What’s For Dinner Tonight! I have not shared a What’s For Dinner post since before the holidays, so I thought it was time to share some of the meals that I have been cooking recently.
These posts give you a behind-the-scenes look at my kitchen life. I often post pictures of our dinners and what I am cooing on Instagram, but since not everyone is on social media, it is fun to share them here too
The pictures I share for my What’s For Dinner posts are not staged. They are the pictures of our meals cooking on the stove, right out of the oven, and on my plate minutes before I eat.
The internet is full of picture-perfect images, but life isn’t like that.
Life is full of messes, quick meals, recipe disasters, and families trying to eat dinner in the midst of a busy life. Those real-life meals are what I am sharing today.
I hope you enjoy a look behind the scenes in my kitchen.

What’s For Dinner Tonight
Let’s start with sheet pan chicken fajitas. I love fajitas. Cooking them on a sheet pan may not be authentic, but it is an easy way to serve fajitas.
I love that this makes a large pan. I often make a whole pan, even if it is just my husband and I, because the leftovers are great.
We often eat Mexican bowls or taco salad because it is easy for everyone to fix their taco meal how they like it.
For this dinner, I used some freezer taco meat, canned beans, cheese, and leftover rice to make them.
I have been working on some recipe development, too. These pancakes were an experiment that worked great! We loved them.
I need to make them one or two more times before sharing the recipe. Look for the recipe coming soon.
I made my husband one of his all-time favorite desserts for his birthday. That means I was finally about to update my 2009 pictures for Peanut Butter Chocolate Mud Pie.
If you like peanut butter and chocolate, this pie is a must make!
The peanut butter pie uses peanut butter cookies for the crust. That meant I had to make homemade peanut butter cookies.
No one complains when you have to make peanut butter cookies.

I made these recently and forgot how good they were.
I tried something new with a chili recipe. My husband and son loved it.
I have made it several times and will share the recipe soon. It is a delicious way to change up chili.
Instant Pot eggs appear a few times a month at our house. They are my favorite way to make boiled eggs.
I had some salami and other meat left over from the holidays. It was unopened but about to expire. I didn’t have much time, so I cut it up and used some of it in scrambled eggs.
It worked great for a quick dinner. I added some grated cheese and salt and pepper.
The salami gave the eggs great flavor.
Eggs and rice with soy sauce and meat will forever be my favorite inexpensive, quick, and easy dinner.
Bacon and eggs also make for a great breakfast for dinner. They are not the most photogenic on a green plate, but they were delicious.
My husband and son don’t love broccoli soup. However, I LOVE it. This Martha Stewart broccoli soup recipe is a favorite.
This picture just shows the soup, but the reality behind the picture is that meat was involved for the main part of the meal.
I ate just a big bowl of soup, but my husband and son do not consider a bowl of broccoli soup enough for dinner. That is fine with me because there were plenty of leftovers for my lunch the next few days.
My husband stopped and got BBQ from a local place on his way home one day when I was not feeling well.
It was so good. The best part, I thought, might have been the leftovers. I got creative and made the leftovers stretch for two more days.
On the first night of leftovers, I made air fryer baked potatoes. Then I opened the potato up, topped it with BBQ meat and cheese, and put it in the air fryer until the cheese melted.
I plan to share how I make the air fryer baked potatoes and how I will made these soon. I make mine a little different than other air fryer potato recipes that I have seen.
For the last night of leftover BBQ, we had a couple of ribs, a little bit of chopped meat, and a couple of pieces of bologna.
I knew it would not be enough to feed three of us, so I made my Instant Pot Mac and Cheese to go with it. It was perfect. It was easy to make and made the last little bit of meat stretch.
None of those things are super creative when it comes to serving leftovers, but I hope that it gives you ideas for making leftovers more interesting.
I love leftovers but don’t usually want to eat them for days. I also don’t want to waste food. Getting creative with leftovers saves time and money.
We love banana bread. I make it often, so I have several recipes that I rotate making. Joannah Gaines’s banana bread recipe is slightly different, but we love it for a change. It also works well gluten-free.
I caught some sort of nasty respiratory sickness earlier this month. It was one of those sicknesses that the cough hung on forever.
One day when I was feeling better, but not better, my daughter spent part of her day off making us a big pot of Ramen soup. I will get her to share exactly what she did so I can make it again and share the recipe with you.
A big pot of soup is the perfect meal to help you recover.
Air fryer nachos have also appeared on the menu plan several times recently. My son and I love to make them when we don’t want to cook.
